I've made this for years. I use 4, 5, even 6 cups of diced rhubarb and mix the rhubarb and sugar together and set it aside while I mix up the cake. (I like rhubarb, so the more, the better, to my way of thinking! If rhubarb is quite tart, use another 1/4 cup of sugar. I also add cinnamon to this mixture, 1/2 to 1 tsp.) I prefer to use half 'n half rather than the heavy cream, but my sister prefers to use heavy whipping cream. I've used other cake mixes besides yellow too. Strawberry is good! Serve with a scoop of vanilla ice cream or whipped topping. Delicious!

This seems easy enough to attempt. Can you tell me if the sugar remains granular/gritty when the cake is done? Thanks!

There is a lot of sugar already in any boxed cake mix. I bet, even though rhubarb is tart, that you could cut that extra sugar back to 1/2 cup and still have a tasty dessert.

And even with the cup of sugar, the tartness of the rhubarb is still evident!
