If your oven is anything like mine, every time the thermostat calls for heat, the coils light up above. When our oven was new I had similar issues. Baked cakes burned on the outside while they were not done inside. Besides placing them on the lowest rack, I now place a piece of aluminum foil on the top rack, a few inches below the coils to deflect the heat--Voila! Today I made a vanilla-orange spongecake--perfection! Hope this helps!

Invest in a good pan - I use Wilton - they are heavy and heat evenly.

I have a baking thermometer I use for Bundt cakes. It's made by Nordic Ware. It really works.

I agree you should get an oven thermometer to check for accuracy; also that your oven was too hot. If you used a dark pan, that could be a problem, too. I use only Nordic Ware bundt pans in gold or platinum, the heavy duty ones that cost about $35.

Thank you all for your help!! One more question please? Do you butter and flour pan or use baking spray, aka Pam with flour? Can you use sugar along with the butter instead of flour so that there isn't a white dusting on cake afterwards? Thank you for much for helping me again.

Some times I think it is the pan you are baking in but I would get my oven temp. checked out. I can say these new cooks essentials dark baking cake pans and cookie sheets do not work for me at all every thing over bakes in them. I have so many of them in different sizes and have gone back to the ones I have used for years. My daughter bought me these new ones she thought they would bake nice, well she and I agree they are not for us. I use Pam mostly but some times I do the shortening and flour way. In my bundt pan I use the shortening and flour before I bake with it.

On 4/19/2014 cater said:

Some times I think it is the pan you are baking in but I would get my oven temp. checked out. I can say these new cooks essentials dark baking cake pans and cookie sheets do not work for me at all every thing over bakes in them. I have so many of them in different sizes and have gone back to the ones I have used for years. My daughter bought me these new ones she thought they would bake nice, well she and I agree they are not for us. I use Pam mostly but some times I do the shortening and flour way. In my bundt pan I use the shortening and flour before I bake with it.

Thank you! I will get my oven checked out... and this evening I baked some of the Dough Boys Biscuits and watched them as they baked.... over is hotter then temp...tops browned quicker then the bottoms, so need to also adjust cause the electric coils are on the top under side of oven.
