i LOVE lamb shanks.

they are easy to make, especially if you cook them low and slow.

if there is a butcher, i ask him to cut them in half because they fit better in a dutch oven or a slow cooker. sear them first with spices (salt, pepper, garlic powder, onion powder, tumeric, saffron), add fresh onions/garlic, then cover with water and slow cook them. you can add a spoonful of better than bouillon beef if you like. the broth they make is so good. i generally serve them with white basmati rice OR dilled rice with lima or fava beans.

i dont care for mint jelly with my lamb, but you could serve it if you like.

Funny story, when my hubby's younger brother married years ago, his wife would cook on occasion lamb shanks for Sunday's dinner, after several years of this my brother-in-law casually mentioned to her that he really didn't care all that much for lamb but ate it to appease her, she in turned started laughing and said she didn't care for lamb either but cooked it because she thought he liked lamb. Maybe it was the way it was prepared, who knows, end of story, LOL.

I myself have never eaten lamb that I am aware of.

It depends what cut of lamb you are using. If it's leg of lamb....Cut some slices into the meat with a knife. The slices should be no bigger than to fit a half garlic clove. Them pinch the top off a rosemary sprig and place it in the same hole as the garlic. Then bake your leg of lamb. Remove garlic and rosemary before carving. * Some people leave it in when carving. Totally up to you.

If you are using smaller cuts of lamb, like loin or shoulder....I toss the chops in olive oil, salt, pepper and chopped up rosemary them bake.

Or.....you can put the chops coated with olive oil, salt and pepper in a baking dish and lay some rosemary sprigs along side the chops just to perfume them. Some people don't like to eat rosemary.

Sidenote.....Always have your rosemary brushed with olive oil. It keeps it from burning and drying out.

Any questions? Just ask me. Good luck.

We love lamb and eat it often...chops and leg. Yummm. I mostly cook it with garlic, but I love rosemary and would like it that way. My husband hates rosemary, so I couldn't make it that way for him.. I have eaten it with mint jelly, but don't serve it way at home.

Every year when we go to Cape May, NJ, my husband orders lamb shanks from George's Place Greek resturant. Sometime we go there twice in one week and he always orders the lamb.

Fixed the Lamb Shanks last evening and really enjoyed them! Rosemary and Mint is not my favorite.... just garlic with lamb is!

Lots of meat on the shank. Easily 3 meals. Didn't use the extra Rosemary/Mint sauce! Baked a sweet potato.

Will purchase again.....or maybe try making it myself!
