I have tried many brands of MAPLE flavoring for baking....the flavor is just not 'there'...even when I doubled the amount of Maple flavoring I was still disappointed...does anyone have a favorite brand? thanks.

Have you tried reducing the total sugars and using real maple syrup?

Fwiw, locally produced maple syrups vary in taste by region, just like local honey.

There are grades of syrup down to dark and very dark.

@Mom2Dogs - due to our way of eating, I use flavorings in certain things when I don't eat the real food product. For instance, we don't eat corn so I'll use a sweet corn flavoring to make cornbread. Another one that most people don't even know exists is mashed potato flavoring. I add that to mashed cauliflower. Anyway, these flavorings can be difficult to find, but awhile back I found a website that I saved and will be buying from when my current flavoring supply is depleted. The website is called One on One Flavors - The Flavor Superstore - www.oooflavors dot com. I don't know if you want to try one more time but they do have maple flavoring. That's the route I would personally take because maple syrup is out of the question for us. Plus it's a rigmarole to have recalculate a recipe when you swap the ingredients. JMO

The flavoring gives us that without us comprising. I don't see why you couldn't use the flavoring in actual mashed potatoes to increase the depth of flavor. Just add a dropper at a time, stir, and taste until you are satisfied. Be careful not to overdo it. I don't know what would happen if you did. If you're thinking about thanksgiving, I'd do a test batch in advance.
