I boil yellow or white new potatoes in their skins, cool and peel them. The peels just easily come off. I add mayo, chopped baby dills and a shake or two celery seed and grwond pepper. Mix it up, top with a bit of paparika.

This is the way my mother fixed ps, one of the first things she showed me to make. We didn't add raw onion, none of us cared for raw onion in anything.

I have found the red potatoes have eyes that make me feel ill. I always chose red potatoes for many dishes until learning about solanine in nightshades which affect me with my GI issues.

I'm not a potato salad fan but now have one I like. I don't have a real recipe, but this is what we put in it:

Boiled red potatoes in chunks

Boiled eggs

A tiny bit of Hellman's mayo--not much!

A little drizzle of good olive oil--not much!

A squirt of rice wine vinegar (or any kind)

(and or lemon or lime juice would work!)

Sweet pickle relish

Finely diced sweet or red onion

Salt to taste

Black and white pepper--quite a bit for me and freshley ground so you smell it!

And a big handful of finely minced fresh:

Parsley

Chives

Dill

Mint

Thyme

For the right crowd, put out a bottle of Frank's Hot Sauce to go along! We have an herb garden and I love love having these fresh herbs in this salad (and in all our green salads too!). It makes such a difference in food!

I just added another boiled egg to some for a quick lunch! SOOOO good!

Your recipe sounds delicious!! I LOVE spud salad and just put in my spuds and eggs into my p/c to cook--that will take 3 minutes -- think I will add a little olive oil as well as mayo--I like that combo and then use the same ingredients you used--maybe with a tweak or 2.

Not a fan of added stuff like radishes or celery or olives---bacon sounds good and I do enjoy added fresh herbs, but dried ones are fine. I do like dill pickles or relish added tho, not a fan of sweet relish. Had some dill pickle mustard that I used and that was pretty tasty too. and love the added olive oil--never used that before--was very good.

I love to make my own potato salad. I hate relish, so I never add that. Unfortunately, most store bought potato salad has that nasty relish in it, so I rarely buy it ready made. I do add bacon bits because I love the added salty flavor.

It's always a little of this and a little of that. It's personal. I do agree that red potatoes are the best. I leave the skin on. I like celery in mine, but DH could do without it. I also love Old Bay seasoning. Even though we have mint in the garden, I think I'd leave it out of mine, but you go for it!

I stopped making it because I live alone and it's too much trouble to make just a little bit.. I do buy prepackaged on occassion at the store, but don't really care for it because they put sweet pickle relish in it. I like relish, but not in potato or macaroni salad. They also usually use too much mayo or whatever. I doctor it as best I can.

I do Weis once in awhile, but they do the relish thing, just not as much. I used to get from Wegman's, but theirs is twice the price for less.

I've been buying Amish brand potato salad, the plain variety, which seems to be sold Nationwide. I think I'm addicted to it, in fact. I have a spoonful with dinner almost every night. I hate the time-consuming chore of making it.

I'm not a fan of relish, my potato salad is pretty basic, I only add a few ingredients but that's the way I like it. Grated boiled eggs, black olives and slivers of green onions, mayo, salt and pepper.

I do buy prepackaged on occassion at the store, but don't really care for it because they put sweet pickle relish in it. I like relish, but not in potato or macaroni salad. They also usually use too much mayo or whatever. I doctor it as best I can.

Look up Reser's potato salad for descriptions as some do contain relish. . They have many different versions like 8 I think lol. Incredible variety. Classic, Southern, Deviled Egg, Amish, Steakhouse, Loaded, Mustard, Red Skin, Homestyle etc. etc. Then look up what versions available in your store. In my store they vary between $5.50-$6.50 for 16oz. . I'm single. I find them quiet good when I can afford it.

I am surprised that people see potato salad as time consuming. To me it is one of the easiest things to throw together. Bake an extra potato and it's done. Or add a couple to any instant pot dish, and you've got potato.
