I tried the plant-based foods only regime and I felt really good. Watched the Forks Over Knives video and also would purchase the magazines named the same.

One thing about the way the magazines mentioned on how to eat was to eat as much/little as you want. There was no calorie counting, which I was glad of; there was no weighing of food, which I was also glad of. Because these types of foods are dense in nutrients, I had no problem with hunger pangs; there were none.

Don't know how I got off that way of eating, but it had nothing to do with the plant-based foods, which were wholesome and tasty. I also purchased organic whenever that was a choice in the store.

I do make a pasta salad with plant based pasta and lots/lots of veggies.

Every 6-8 weeks, I'll order from an online meal service to get things that are not readily available ........ususally meals with shrimp, steelhead trout, salmon or scallops.

America's Test Kitchen has a cookbook on plant based eating, 500 recipes, The Complete Plant Based Cookbook. It has a primer in the beginning of the cookbook that explains this way of eating in easy to understand language. In the back of the cookbook, there is an index that lists which recipes are gluten free, which I appreciate. Plus, the nutritional information for each recipe is listed in the back, along with a traditional index listing all the recipes. I have made recipes from this cookbook and can recommend it to anyone curious about this way of eating.

And, no, it's not just eating rabbit food. The recipes in the cookbook include breakfast foods, soups, stews, rice, pasta, tacos, pizza, beans, grains, salads that are not lettuce-based, fruits, and desserts. Quite a variety of dishes, not boring at all.

I think this could also be easily combined with the Mediterranean way of eating that incorporates minimal amounts of meat for those that don't want to give up meat or seafood entirely.

My husband already noticed that the Neuopathy in his foot is either gone or anyway, it feels normal now. It felt rubbery when he would rub it, but no feeling in the foot. Now yes.

Today on Mother's Day he's making a chicken on the grill.

Once in a while we will have meat, his doctor said we should be on this 75% of the time and we are. Yesterday I made a lentil meatoaf, and there was a lot of steps to it, it was good, but took a long time to make. A hamburger meatloaf would have been much easier. If anyone wants that recipe I used, I'll post it. It made a huge batch, I had to use two loaf pans. He made a black bean dish in the crock pot, and that was good and easy too. Now we have something to serve my vegetarian daughter when she comes over with her family tonight. Her husband will eat chicken. He gets enough vegetarian foods. The twin girls are 8, they are Autistic and very picky eaters. I don't know what they will eat. One likes mac n cheese, the other hates anything with noodles!! Eggs are also a good source of protein either fried or scrambled or egg salad. I wish you and your husband well. Oh I also made stuffed peppers with quinoa. Quinoa is high in protein and can take on lots of flavors, just make sure you rinse well.

I don’t eat plant based only but still avoid meat and some dairy. I supplement my protein with tofu, beans, lentils, quinoa and tempeh.

Not sure where you're searching but I googled it and found plenty.

Amaranth is a grain so basically use it to bake with, use it alone as a side or combined with other ingredients. Martha Stewart dot com has an amaranth page about cooking it and how to eat it. Good place for starters.
