We prefer the pressure cooker for cooking pork chops, actually all cuts of pork. A prime example: bought a large family pack of boneless center cut pork chops and divided it up into meal sized packets.

Cooked the first pack that night on the stove-top. They were quite tough, but edible. Did the next packet in the pressure cooker following one of Bob Wardens recipes in one of his pressure cooking books. They came out just as tender as could be. The next packet I used one of Meredith Laurence's pork chop recipes from her "Comfortable under pressure" cookbook. They too were tender and delicious.

So now we do all pork chops in the pressure cooker. From 5 minutes for unfrozen boneless pork chops to as much as 15 minutes for frozen, bone in pork chops. All tender and delicious!

I highly suggest Bob Wardens "Slow Food Fast" or his "Great Food Fast" cookbooks or Meredith's "Comfortable under pressure" as a good place to start for really excellent pressure cooker recipes.

Also excellent corned beef recipes as well as chicken and much more.

Enjoy!

Camo

I have had very little experience with a pressure cooker & need a little advice. I have two thick pork chops (boneless). Do you have a recipe you use that also makes gravy & possibly potatoes? Please give me any suggestions you have. I use a slow cooker most of the time, but would like to start using the PC also.

I'll be interested in responses you get from experienced cooks; but I think you'd need a pork roast to make gravy. (grease and liquid) Pork Chops are cut pieces of meat and start out dry.

Maybe you need a pressure cooker cookbook to get you going. I'm fairly new to pressure cooking too, but I did get the book "Slow Food Fast" by Bob Warden. There is one pork chop recipe in it called Pork Loin Chops with Apple and Sherry. I have no idea if it's a good recipe or not because I've kind of given up on pork loin chops as they are always tough and dry for me. Ditto even for pork loin roasts, but the shoulder roasts which have a lot more fat are usually moist and good. Have fun learning to use the pressure cooker.

I cook mine like the 2nd one, but don't use a recipe except for the time to cook. If you don't want to use soup, make a roux and use chicken broth for desired thickness.

I recently discovered a gem of a website. It contains the user's manuals with basic recipes for all the major brands of pressure cookers. You can browse through them and find directions for cooking just about anything. Also includes instructions for using all of QVC's brands.

http://www.hippressurecooking.com/pressure-cooker-recipes/

Hi, Zhills, That first recipe for pork chops looks good. It calls for a proportion of 8 chops, 4 potatoes and a cup of water. I'd only be cooking two chops and one potato. Do you, or anyone out there, know if I would still have to use a cup of water, or does it work to use less? I guess I'm not sure if there's a minimum amount of liquid you need if you pressure cook. Thanks, Kay

I braise my pork chops on the stove top. First, I brown them. Then, I put in a few sliced onions. Once they are browned, I pour in boiling hot water, turn the heat to simmer. In about 1hr. 15 mins., I remove the chops, put in sliced potatoes, turn the heat up to get them going, turn it down and put the chops on top of the potatoes. I've never made a dry pork chop yet. Of course, this method doesn't give you the speed you want with the PC.

The first thing one should do with a new pressure cooker is perform the water test to see how much water his/her PC loses. Some PCs are better than others in that they lose less liquid during cooking. If your PC does not lose much water during the water test, using less than a cup of liquid during cooking will not be a problem, especially for less than 15 minutes of cooking.

I live at high altitude and for super tender thick (1 1/2 inch) pork chops, I cook them for 40 min. I brown them first, my pc browns, top with Heinz 57 and sliced onions. I use about a cup of wine for my liquid. They are really good and super easy.
