      <description>&lt;P&gt;I use the packet of spices that come with it.&lt;/P&gt; &lt;P&gt;I also buy a corned beef ROUND - not BRISKET - if it's available.  More $, but much less waste/fast/grease.&lt;/P&gt; &lt;P&gt;Put in a very large pot of COLD water, bring water to just moving/simmer, then turn the heat on simmer.  Cook on simmer for 8 hrs.&lt;/P&gt; &lt;P&gt;I keep another pan of water simmering so when the water in the pot with the meat starts getting low, I pour more HOT water over into that one.&lt;/P&gt; &lt;P&gt; &lt;/P&gt;</description>
