I no longer eat meat, but I remember the intoxicating smell and taste of a DELICIOUS piece of smoked pork or beef ANYTHING!😋 Waiting for them to be done was the hardest part!😁

I ❤ smoked salmon or trout whenever we grill! Tonight's dinner will be apricot and sweet chili glazed salmon, green beans and squash. I am also thinking of baking a pan of sticky buns for dessert this evening courtesy of a recipe posted in the Quick Potsticker Soup thread, and HOPE they turn out ok!🤞🤞

I sheepishly admit to never having heard of Head Country. Happy cooking!🥰

~~~All we need is LOVE💖
YUM!!! I love baby back ribs.
DH uses a recipe of Melissa Cookston sometimes with brown sugar & honey that are really good.
Some baby back ribs DH removes the membrane, puts Head Country seasoning or salt, pepper, chili powder on the ribs, double wrap in foil tight, put in oven at 400° for 2 hrs. After that you can put bbq sauce on them. You can either purt them on the grill 5-10 mins or under the broiler for a few mins. Keep an eye on them.
My sister gave me this recipe. We thought yuck that won't turn out but they are really good.
We use Head Country BBQ Sauce. We also like Sweet Baby Ray's. Most of the time we mix the two since HC is pretty thin.
DH has been using a Myron Mixon hot & fast brisket recipe cooked at 300°. DH puts it on Pit Boss on rack that fits on top of foil pan with a little water uncovered fat side down for 2 hrs, uncover it put in clean foil pan fat side down (no rack) covered with foil for 2 more hrs, or until temp reaches 205°. After that DH brings in the pan with brisket, wraps with towel & puts in the ice chest. LOL!!! He leaves it in there at least 2 hrs. This way you don't have to wait as long to eat it. It turns out good too.
I don't like a lot of smoke flavor. My stomach can't deal with it now as I get older.
Is that BBQ sauce?
I think we are making reubens this weekend. Not sure what else.
@SaveTheTurtles @SandySparkles I just looked it up and Amazon carries it, Walmart too and they probably ship as well.  We are Original flavor users.  It is sweet, but not nearly as sweet as most sauces now, a little thinner, and to us is perfect for barbecue!
@Sooner
I don't know if Wal-Mart will ship it or not. When my sister in Fl tried to order it they didn't ship there. Every time we go to Fl we have to take several bottles for my sisters.
The prices on Amazon when I saw them was higher priced.
All this talk about ribs brings back memories of smoking St. Louis ribs which is very  popular here in St. Louis. I haven't had ribs in years due to having to make changes in my diabetic diet. My grandma used to season and cook ribs on low heat for about 1 hr ( if I remember correctly) then smoke them on the grill and add sauce while smoking. YUM !!   I don't remember name of the B-B-Q sauce back then but I do remember using Sweet Baby Ray's sauce back when I cooked ribs. Yum again !! Thanks for the memory    Oh and by the way my dinner tonight is a salad with shrimp ( boiled) and low fat drsg. Pretty much my nightly dinner here lately. If not that it's sauteed veggies with turkey sausage. Got to keep my BS down
I always said I didn't have a favorite food, but now that I am older, I know bbq ribs are my favorite.    I like them right out of the smoker and I have an oven recipe with homemade bbq sauce that is to die for.
I have never seen nor heard of Head county sauce, but I'd give it a try.
Enjoy your ribs.  Maybe I'll make ribs for tomorrow's dinner. You got my mouth watering.
Back  in the day we used Cattlemen's sauce when it first came out.  Later on sauces got a lot sweeter than we like them, so we've narrowed choices alot.
Commercial bbq, here there are several that are good and Billy Simms is good--I guess it depends on who is running it.  Lots of small stands too
There is just nothing as good as dry rub smoked ribs - St. Louis style! I don't want any bbq sauce at all - just the deliciousness of those smokey seasonings on those slow smoked ribs! Cheers!
