Easy muffins

I'm lazy today and and wanted something sweet. Awhile back I purchased a bag of Martha White strawberry muffin mix, and talk about easy, I put the mix and a half cup of milk in my 4 cup measuring cup and gave it a quick mix. It made 6 med. size muffins and they were pretty good for the amount of effort I put into making them. I think next time I'll make the pumpkin ones.

@QVCkitty1 I love those muffins! I haven't made them in ages either. I always liked the strawberry and blueberry. They're so easy to make it's hard to believe they turn out so good! Thanks for reminding me about them. I'll pick some up next time I'm at the store.

I almost forgot, you can make them really big if you have the large muffin tins. They turn out beautifully!

@The Jiffy Blueberry, Apple Cinnamon, Raspberry or Banana Muffin mixed are great too, but we mostly make them into pancakes. My grandsons love them!

Oh my, we've used that mix in my family for as long as I can remember and it never fails. Our preference is mini muffins.

The Betty Crocker corn muffin mix is my favorite. You need an egg, milk, and two tablespoons of melted butter, but it makes six delicious muffins. My local stores stopped carrying it, so I order it online through Amazon and get a box with nine pouches for $12+.

Contrary to the instructions not to overmix, I use my little electric whisk thing to whip it into a frenzy and they come out super tender, light, and fluffy.

You reminded me I have few pouches of the Betty Crocker in the pantry. I make it in a small skillet and cut into wedges. Much more natural tasting than Jiffy.

It's the best corn muffin mix I've ever found. I made some just last Tuesday. They're very good. They're hard to find locally these days for some reason. The stores all have lots of the Jiffymix, but I like the Betty Crocker ones more. You would think a company like Betty Crocker would have the pull to get them on the shelves, but they're not available locally these days. I'm not sure why. I can get them through Amazon, so not a big deal.

Just a thought, but it may be that they stopped carrying Betty Crocker because Jiffy was a better seller. Price is a big consideration these days and maybe people were opting for the cheaper product and Jiffy was a better mover than Betty Crocker.

I have not tried those flavors, yet. I would like to try the Apple Cinnamon mix.

I make Jiffy Corn Muffins and those are good, quick and easy. I recently found Jiffy Corn Muffin mix with honey and

those are even better, not too sweet.

DD came home with a Martha White strawberry muffin mix. Never had heard of it.

I like the Martha White Lemon Poppyseed Muffin Mix. It's gotten harder to find lately, but Walmart still carries it.

I have a 6 tin muffin pan, which is perfect for this type of mix. I also use the pan when a recipe makes more than 12 muffins (for the extras) or if I cut a muffin recipe in half.

I know that I can trust your opinion.

So, yesterday I had a real craving for a delicious something, anything blueberry, so while at the store grabbed a BC muffin mix.

I knew the little can of included blueberries would be a sad affair, but luckily had a package of blueberries in the freezer, so tossed them in too.

I made a small loaf of bread instead of muffins, & topped it w/ some crunchy sugar.

Wow! It came together so fast, & is even moister & tastier today.

I'm definitely going to keep a few packages in the pantry from now on! Great for a last minute dessert, breakfast treat, or for unexpected company.

@sabatini @gardenman : I love the Betty Crocker Muffin Mixes and Betty Crocker Cookie Mixes. I have found the smaller size BC Cookie Mixes at a Dollar Store.

I have the full size BabyCakes muffin maker, you can bake 6 or 12 muffins. So easy and especially in the summer not using the oven. Muffins are easy to freeze and warm in microwave.

Yeah, they make very good muffins with very little effort. I highly recommend them. I'd switched to the Jiffy mix for a while when my local stores stopped carrying the Betty Crocker mixes and it's just not as good. When I found the BC mixes at Amazon, I went back to them.
