To be honest, you're hard-pressed to go too far wrong with any cookware. I watched the "Great Chefs of (insert name of a big city here)" series when PBS first aired it many, many years ago, and I was amazed at the cookware commonly used in the finest kitchens. It was often the cheapest, most beat-up, stained, and unsavory-looking cookware imaginable. In some cases, they even used cheap tinfoil disposable pans to make delicate sauces. You can give the best pans in the world to a bad cook and they'll still be a bad cook. You can give the worst pans in the world to a good chef and they'll still be a good chef.

I have a small All-Clad fry pan that's great. Does it cook better than my cheap frypan that was included with some other pans from Walmart? No. It's just a pan. I have a $13 12" cast iron frypan that's great.

Since your old pans were thirty years old, I'm assuming that means you're among us older cooks. I'd probably go against cast iron or any of the really heavy pans that become a chore to use. A lighter, easier to handle pan might be a better option for daily use. Just find pans that fit what you need them for.

I went very cheap on saucepans ($18 at Walmart for a set of three with glass lids and a small frypan) as I rarely use them. I mostly use them for cooking corn or making a custard for homemade ice cream, and they're fine for that. When making a custard, I'm standing over it, stirring it nonstop while monitoring its temperature, so I don't need a great pan for that. And boiling water to cook corn can be done in nearly anything.

My pans aren't hanging from racks and on display for the world to see, so I don't really care how they look. I just care that they do what I need them to do. I'd rather impress people with my food than my pans. It's not hard to spend thousands of dollars on cookware and find out you're still the same cook you were before.

As an aging cook, I now prefer lighter-weight, easier-to-handle, easier-to-clean pans. I'm not trying to impress anyone. I'm just using them to cook food and you can cook food in pretty much anything.

I bought a set of Kirkland Signature Hard Anodized cookware at Costco about 20 years ago. Still cooking with it and only wore out one pan, probably due to using high heat. Granted, I don't cook on a daily basis, but I've been very happy with it. I've replaced that one pan with a Curtis Stone pan and have bought a couple of smaller Curtis Stone pans to add to it. My husband has worn one of the CS pans out cooking his eggs and sausage on a daily basis, so even his good nonstick pans don't last forever.

As another poster mentioned, I will only be replacing individual items as they wear out instead of buying another multi-pan set. How many stock pots does one need? I'm still a fan of hard anodized though.

I'm not a good cook, so I've only got one good stainless steel skillet. However, the few things I do cook are good.

Another vote for All Clad. Expensive but worth it as they are "forever" pieces of cookware. I own four stainless steel pieces and they still look new after several years of use. Did I mention even cooking and easy clean up? To cut down the cost, ask to get on the All Clad mailing list for seconds. The "imperfections" are hardly noticeable and do not affect the cooking. The discounts for these seconds are very attractive in comparison to the full retail price.

I've got some Rachel Ray non-stick pieces and really like them. I use the pot-bellied steamer and a 14" skillet several times a week. DH puts the steamer in the dishwasher and it's held up very well. The nonstick surface is just like new. The outside has faded a little, but I'm not worried about that. DH uses the bottom part of the steamer to heat up soup or other foods/sauces and it's sturdy enough that the food cooks evenly. The skillet's my go-to piece when I need to cook a fairly large quantity of food. I also like Scanpan, which I buy from SurlaTable and Amazon. It's kind of pricey and pretty heavy, but they're also on my go-to list. I usually get them on sale. I prefer to pick up pieces as opposed to a complete set so I'm not saddled with pieces I won't use.

On a budget & small spaces, the hard anodized 8qt Rachel Ray oval stockpot. Yes, the outside gets a little worn but the pot is a workhorse. The non-stick has held up over the years. I use it on the stovetop and in the oven. The other bargain item I love is an HSN Kitchen HQ nonstick cast iron pan. The nonstick has held up as well (maybe I am one of the lucky ones).

Chantal ceramic cookware. I received a set when I purchased my induction range. Love the ceramic more than the stainless steel but all the cookware from this brand is superior to any thing else that I used over the years.

You can find this cookware at Kohls, BBB and QVC.

All Clad. They are made in the USA. And they stand behind their products.

DD got me a set of Le Creuset as a wedding present. I love them and still use them. Then about 20 years ago he got me a hanging rack for cookware because I'd always wanted one. I couldn't hang my Le Creuset on it, so he surprised me for Christmas with an All Clad set. I didn't know anything about them. I love and use those too.

Ironically they are slightly different sizes, so they both get frequent use! The All Clad set came with 3 frying pans. I rely on those more. I use my Le Creuset Dutch ovens more. I tend to alternate the saucepans.
