      <description>&lt;P&gt;&lt;FONT size="4"&gt;When canning, you should always leave 1/2" headspace between the food and the top of the lid.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;If you don't have enough product to fill up the jar, just store &amp;nbsp; &amp;nbsp; It in the freezer or fridge if you will eat within a few days.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="4"&gt;I love to can applesauce. &amp;nbsp;I like to mix it with grape purée and make grape applesauce too. &amp;nbsp;Yummy.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

Is Early Harvest the same as Yellow Transparent? That was always a great canning and baking apple. I do up a few quarts each year for Thanksgiving and Christmas, but I freeze it in wonton soup containers or locknlock. Usually I do Empire in the fall, because it's hard to find the yellow transparent in quantity when it's available.&amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;</description>

When the apples are soft, remove from the heat and decide how you like it...chunky or smooth.&lt;/P&gt;&lt;P&gt;&lt;BR /&gt;If smooth or if your left the skin on, run it through a seive, &amp;nbsp;blender or &amp;nbsp;food processor. &amp;nbsp;If you want chunky, just use a potato masher.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;You can add sugar or cinnamon or both or any other spice you like while the apples cook. You can eat it warm or cold. &amp;nbsp;You can can it or freeze it In zip lock bags.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;You can use the water bath method of canning, there is no need to fan using a pressure method.&amp;nbsp;&lt;BR /&gt;&lt;BR /&gt;&lt;/P&gt;&lt;P&gt;I often make grape jam and save some of the grape purée and add it to the applesauce. My children always loved that flavor when they were little. &amp;nbsp;&lt;/P&gt;</description>

      <description>&lt;P&gt;I did a bit of canning and a little freezing when our kids were small. One of my favorite things to can was apple pie filling. &amp;nbsp;I'd make extra for teacher gifts at Christmas - something useable that wasn't another teacher mug to add to the collection. &amp;nbsp;The year I did freezer corn was a huge letdown. Freezer corn is a lot of work for a couple of days. &amp;nbsp;But if you like corn, the payoff is worth it. No commercially frozen or canned corn tastes like home frozen. Back then, we ate corn. Anyway, I did all the work, bagged everything in portioned amounts, put them in the freezer, thought I was set for the year. &amp;nbsp;At some point there was a problem and the power to the freezer was interupted. &amp;nbsp;We had eaten a few bags by then, but the lion's share of my corn was lost. I never did it again after that. I have made some keto freezer strawberry preserves, but since finding a KF brand at Meijer and Walmart (it's called Good Good), I usually just buy it. 🤷‍♀️&lt;/P&gt;</description>

      <description>&lt;P&gt;I was a food preservation specialist when I was working.&amp;nbsp; You need 1/2 in head space to be safe.&amp;nbsp; Anyone just learning I highly suggest you contact your local Extension office, listed for your County Government or check with your State University for help.&amp;nbsp; You can also get help from the USDA food safety website.&amp;nbsp; You can also use the Ball Blue Book for recipes and guidance.&amp;nbsp; Unfortunately, the jars shown are not safe for storage.&amp;nbsp; Too much space for bacteria to grow.&amp;nbsp; If you live at a high altitude, you must adjust your time during the water bath or pressure canning methods.&amp;nbsp; Please research and be safe.&lt;/P&gt;</description>
