That's got more sugar though so don't make that anymore. I read that sourdough is more healthy breads. I still think my Health Bread is very healthy and delicious, so I won't quit making that or the Oatmeal breads, just adding more for variety.

I'm making the starter from scratch without any yeast, and have to discard remaining dough and keeping 1 cup batter, to feed. Saw on google that you can make pancakes with discarded dough. I saw one recipe for it, and it's so complicated, I can't believe someone would go to all that bother, yet I do hate to through out the discarded dough. Anyone?

Over 40 years ago I had Herman. I think it was sourdough. That starter worked me to death. Every time I turned around it needed feeding, baking, or some kind of work. I threw it out after a month or so. I liked whatever I made. I was just not going to devote that much time to the process.

Hopefully, yours will be easier and good tasting.

Thanks for your encouragements, people, I did have success this afternoon making muffins using the discards from the sourdough, blueberry and raspberry muffins. Both batches turned out well.

Husband and my Hospice Nurse daughter loved them, and I sent some home with her. I googled and printed the blueberry muffins, banana bread and pancakes. Good way to use the discards of the sourdough. I will try the chocolate cookie recipe too sometime. Tomorrow I may have enough active dry yeast ready to bake some sourdough bread. So I will look up some sourdough bread recipes. It is fun to experiment especially when it turns out well!!

I was given a sourdough when my daughter was young and took dancing lessons the teacher gave us moms the starter
I think We fed it potato flakes every few days , maybe we fed it sugar also I just don’t remember
It made 3 loaves of bread every few days
I was giving bread away to anyone who would take it lol
I fed it for several years and baked countless loaves of bread until I got tired of dealing with it
With kids in sports and working full time I felt overwhelmed with the bread
I made sourdough bread and also sourdough cinnamon rolls
I still have the recipes somewhere here I’m sure
For the cinnamon rolls The best I remember I just rolled the dough out like reg cinnamon rolls dough , lightly brushed the dough with softened butter, sprinkled with cinnamon and brown Sugar, rolled up and cut into slices and baked

It is really good bread I might start another starter this winter if I find my recipes
Your recipes sound so good

I have made bread for 40 years, by hand and mostly by bread machine since 1992. I've had several experiences with sourdough and frankly found it far more trouble than it was worth. And a mess.

If I weren't going to use the discard I sure wouldn't be making sourdough.

DH has been doing this for a couple of years now. He got his starter from a guy he works with. His wife makes it from scratch without yeast. She makes sourdough bread & sells it for $10 per loaf. It's always sold before she can get it all made.

DH adds a cup to different recipes. He has added it to several different bread recipes, rolls, hamburger buns, pizza dough etc. He even made some crackers

We use the French bread to make French toast with.

He has 2 starters he feeds. Gave one to his nephew. His wife now sells sourdough bread.

Floating sourdough reminded me of a hilarious three part series on Bon Appetit's YouTube channel where their professional baker Claire Saffitz and resident goofball Brad tried to make sourdough doughnuts. Suffice to say it didn't go so well in the first two episodes. Their "ready to use" sourdough sank like a rock in the float test and things went downhill from there. Do a search for "Brad and Claire make doughnuts" and the video should come up. It's well worth the watch.
