When I do a big meal like Easter, I make enough for leftovers. It's nothing to add a few potatoes to potato salad or get a little larger ham for another dinner and sandwiches. I also send enough for DS and fam to have another meal or two. They look forward to it.

DH is looking forward to strawberry short cake this evening.

Do you have leftovers?

I always cook with leftovers in mind. I rarely cook for just one meal. We have tri tip, mashed sweet potatoes, mashed regular potatoes, green beans and amaretto cheesecake leftovers.

Yes. I always try to get a spiral ham to have some leftovers, not a lot, we get tired of it quick, but some. I bought some croissants to make ham & swiss sandwiches warmed in the oven. We'll also have ham & eggs (perhaps omlettes) and maybe one more time as a ham dinner with 2 different sides than we had for Easter, if I have enough.

My SILs took some leftovers home for family members who couldn't come to our gathering due to work or illness. DH took all the leftover pies and cakes to work (they are gone already!). I've got the spiral ham bone cooking away for broth. I'll make a ham and veggie soup with the leftover crudities, corn and limas (and whatever else is in those half-used packages in the freezer.

Finally, I diced up some ham and cheese to put into a chef's salad for DH's lunches this week. The mashed potatoes are almost gone, and they will probably get tossed.

My left overs are half a ham that I didn't bake.....I only warmed up half of it.

I have some cheese cake and a chocolate cake and rice pudding and green salad without dressing.

I had a lot of food and most of it was gone in a flash. My sister and my youngest son took some ham home for sandwiches.

I don't have enough of anything for another meal, but if anyone wants to drop by for coffee and dessert, I will be happy to have you.

One of my favorite things to do with leftover ham is to make a stuffed baked potato. I bake a really large baking potato in a 425 degree oven for about 75-90 minutes. When done, I split it in half an put butter on the potato flesh and mash it a bit. Then I take small broccoli florets and poke them in a random fashion around the potato- using the stem of the broccoli pieces to poke into the potato flesh. Then I take cubed leftover ham and scatter that around the broccoli florets, then scatter sliced raw mushrooms around and some diced green onions. I put shredded cheddar cheese on the top and nuke in the microwave for a few minutes until the ingredients are heated, the broccoli softens and the cheese melts. Usually around 5 minutes or less. This is really good- I have even served it to company at times. It is a complete meal on one plate- protein, carbs, fats, and veggies. And very filling. To me, it is comfort food.

I didn't host Easter this year but if I'm having guests for dinner, I always make a ton extra. I want to make sure there is plenty for the meal, leftovers to eat on and leftovers to send home with anybody who would like them.

These sorts of family dinners are normally a carry in. I left my PB pie and leftover baked beans with my niece and came home with some ham and Buffalo Chicken Dip.
