Fire companies around here are volunteer. They rely alot on donations and fund raisers. Almost all of them have a chicken bbq at one point or another.

There is one fire company in particular that does an outstanding chicken. They have it 2 or 3 times a year.

DD and I ordered some for lunch today. It is a vinegar based sauce. The men start very early and cook over pits. You ordered 2 weeks in advance, it was so quick, drive up, give your name and what you ordered, exact amount of money with you, someone brought it to your car, off you go.

It was fall apart tender with a ton of flavor.

Of course, prices have gone up, $12 for a dinner (1/2 chicken, potato salad, baked beans, roll and 2 cookies. Just a 1/2 was $8. We got it because it was for a good cause, always happy to help out local fire companies.

They had a good day for it, yesterday was windy and rain. Today was just beautiful, they lucked out weatherwise. It looked like a steady stream of folks when we were there about 11:30.

Where I live, in the late spring and summer months the volunteer fire companies do a BBQ Rack of Ribs. They use a dry rub on the ribs and they're delicious! They sell out quickly, so you have to be there early and get in line if you want them.

I will always have a special place in my heart for Volunteer Firefighters and Fire Stations. My father was a volunteer for all of his life, even after he was not able to actually fight fires he would go to the fire station and clean the station, help clean the equipment and any other chore he saw needed attention until his passed away.

He taught my son the trade and would take him sometimes to the fire station to help him. My son took right to it and when he was old enough he volunteered and after school he went to college to get his Fire Science degree and now he is a career paid federal government firefighter/EMT.

The descriptions of the cooking are making me hungry. Yes, some of those fundraisers have the best food, I agree. I live in a church centered community. Many churches do Fish Dinners every Friday during Lent. They lines are long; people just love the food and the providers always sell out. It's a good way to support community causes and the food is almost always excellent and very reasonable in price if you compare it to eating in a restaurant these days.
