I like rump roasts. I trim excess fat, brown it on both sides in my slow cooker, then add water and beef boullion cubes. Put in potatoes, onion, carrots and cook in slow cooker for about 8 hours.

Sometimes I add dried onion soup mix, or canned french onion soup, or italian salad dressing. Depends on my mood when I am fixing it.

I love a roast....and the several days of left overs plus some to freeze.

I love a rib roast, but that's more holiday.

What roast is your go to"?

Here's mine. Awesome gravy. I prefer this with added thickening in the crock pot for tenderness.

Mushroom Roast

Rump or Sirloin Tip (I do 5 lbs)

2 Cans mushroom soup

1 Pkg Lipton Dry Onion Soup packets

2 tsp. Thyme

2 Tbsp. parsley

2 Tbsp. Steak sauce

2 Tbsp. Worchestchire sauce

Cut off fat and place roast in deep casserole.

Mix all remaining ingredients and pour over.

Cover as tightly as possible.

Bake at 325 degrees 3 hrs.

You may need to thicken the gravy if the roast has a lot of juices.

Old fashioned rump roast just like mother and grandmother made. We also cook it with a small pork butt. We use to roast them with a piece of veal but those days are gone. My favorite part is "stuffing" the beef with garlic cloves. Makes great au jus.

It depends on the end result I want. I like to use a chuck roast made as a Mississippi Roast or three envelope roast, but lately I've been on an eye of round kick. Mmm, so good.

All the above are my favorites. One not mentioned that I like to make is a roasted tri-tip. I rub it with Montreal steak seasoning and some extra garlic and roast it in a very hot oven (425-450) for about 40-45 minutes depending on the thickness and weight of the tri-tip. I dont' even bother to put it on a rack. You can add some baby red or Yukon gold potatoes around the roast to roast at the same time. I like this cut of meat because of the varying thickness. Some pieces are more well done and the thicker part is rare- so everyone gets the type of doneness that they like.

I like to roast a pork loin with garlic salt and freshly ground pepper. Sometimes I'll marinate it in teriyaki sauce before putting it in the oven.

I also like making roast chicken in my Ron Popeil rotisserie. I sprinkle it with Emeril's essence, then set it and forget it.

Both are simple and delicious.
