Is anyone cooking dinner in this heat? I'm trying to have some cold meals. A dish of ice cream would be perfect for me, but my

two guys need "dinner".

Today I made a taboule salad. We will have cold shrimp cocktail.

Hummus will be served and instead of pita bread, we will have vegetables for dipping.

There is ice cream, if anyone wants it. My husband has been hoarding ice cream. Right now he has 10 quarts of various flavors of Brigham's ice cream. I don't know if he thinks there may be an ice cream shortage. Every time he goes out he buys more. There is not much room for real food in our two refrigerators. I'll have to tell him to stop with the ice cream.

     Anyone have cold meal ideas?

I live in Arizona so heat is a normal thing for us. We eat anything anytime. We make stew in July sometimes but today we had egg salad sandwiches simply because we are both recovering from Covid and it's to much effort to cook.

I made tuna pasta salad on Monday. I made it early so it would be nice and cold for dinner. DH found it and ate it for lunch. He had it again for dinner.😎

we are eating almost all meals cold except for breakfast where I boil eggs or make oatmeal in the microwave. I use the toaster and micro only.
Cold plates with Sausalito turkey ( Boars Head), a slice of cheese, some potato salad, fresh strawberries, blueberries, or watermelon.
Chicken salad in pineapple half or tomato

Big spinach salads with everything I can think of on top like egg, ham or chicken, veggies, jalapeños and walnuts.

I have made pasta early in the morning while doing breakfast, stick in the fridge and then reheat in micro for dinner or leave cold and make pasta salad.
DH has been eating way too much ice cream...he finished off the last half-gallon a couple of days ago and I didn't buy more. Now we have Outshine fruit bats and they are really good...I like the mango the best.

The Outshine bars are good to buy at Costco. You get four boxes of them in a big box for little more than one box costs at the grocery store. You get four flavors and they are very cooling. Ice cream makes me thirsty.

DD says I am supposed to call the cold plate I make a " charcuterie board" but I can't make myself do that. I grew up where we had hot summers and my mom served cold plates...so that's what they are.
My mom made a great tuna salad. It was iceberg lettuce, chopped tomatoes, crumbled cooked bacon, and a can of tuna in big chunks, not flaked up. Just a little Miracle Whip or Mayo thinned with a bit of vinegar. She always served it with cold baked beans and bolillo rolls. I had forgotten about this salad so will need to put that in my list.

Today was the first day that was truly unbearable here, hot and very high humidity.

I'd been cooking until now. I am giving hub his hot dogs in honor of the day. I didn't know what I was going to eat but my neighbor who loves to cook (heat doesn't bother her apparently) just came by with a small macaroni and cheese cassarole. I will take a small amount each night - and "toss" it with green veggies - broccoli or peas. Too hot to eat much and it cuts down on the calories.

I make a lot of tuna and will cook eggs which doesn't use much heat. I eat salads with turkey or chicken and lots of veggies - tomatoes, green pepper, onions, cukes and a sprinkling of croutons and a handful of dried cranberries.

@Sooner OMG! I don't think that I could survive in that heat.

A few years ago, I visited my cousin in Florida at the end of April. They didn't even turn on the AC. I thought that I would die from the humidity. Humidity actually makes me feel ill, so I stay indoors, when it is high. He keeps asking me to move there. I tell

him that I could not take the summers. Besides, all my kids are here.

I know what you mean about the old ovens. In the 60's, I

loved baking in the fall. It took the chill out of the house. It is great that our self-cleaning ovens are so well insulated. Yesterday, I did use the oven to cook bacon for BLT's.

That is great, how you make yogurt. I've never seen a yogurt maker. I just buy plain Greek yogurt and add a little honey and some berries.

A big fresh spinach salad with hard boiled eggs, cheese and veggies and walnuts. Maybe will throw a few strawberries in it. I have some poppy seed dressing. Yum. Some watermelon and probably a few freeze pops later! A big glass of ice water or iced tea. Done!
