Hardcoat enamel (which they now call porcelain enamel, I believe) is just aluminum vessels that are coated with this porcelain enamel. Not the best conductor of heat, in that form, and not the most durable, by a long shot. </P> <P>For aluminum cookware, I'd totally stick with Hard Anodized. The difference is night and day.
