I love it simply with garlic, olive oil. (I'm sure your addition of soy sauce will be yummy too)

I mostly cook it into veggie soups.

Last night I didn't feel like anything fancy just something I could "make up" and throw together with what I had in house, easy.

Made bow-tie pasta, threw it into a zucchini, grape tomatoes, spinach, garlic and olive oil sautee' I made, threw in a few leftover canallini beans and finished with some fresh grated cheese.

Was pretty yummy.

I like to throw spinach into pasta dishes with shrimp or scallops too. Or even just spinach and scallops, or shrimp, sautee', with no pasta if you want low carb, still yummy.

Love raw spinach but only way I can eat cooked spinach is if it's hiding in something else. There is a dish called Joe's Special, made with scrambled eggs, sausage, onions, spinach and topped with sour cream and shaved parmesan. THAT I can devour if someone else cooks it. Alas, all my attempts have turned out very badly & I have been requested to never attempt it again for dinner. Lol.

I brush my 5 quart stockpot with olive oil, add half a large bag of baby spinach and sprinkle it with garlic salt. Add the rest of the bag of spinach and sprinkle with more garlic salt. Put a lid on it and cook on medium low heat, stirring occasionally, until it reaches your preferred texture. I'll also add spinach to soups, stews and stir fries.
