This interested me so I watch a little of the video.

Geoffrey was basically emphasizing the importance of "low and slow" vs. quicker cooking methods, and I guess this pot is supposed to make it easier.

I would just use a regular pot.

Comes with 2 lids I guess 1 for regular cooking & the other for low pressure cooking to infuse flavors.

Looks like you could do the same with a pressure cooker to infuse flavors or crockpot or dutch oven to slow cook?
