      <title>Help Build a Recipe w/ Corn</title>

      <description>&lt;P&gt;I have fresh corn I need to use up.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;I have this new silicone tray w/ miniature cups that I need to use for an upcoming event (&amp;amp; other bite-size recipe).&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;So, I would like to practice run with the new baking tray &amp;amp; also use up the corn.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Corn - shaved off fresh kernals&lt;/P&gt;&lt;P&gt;Flour - how much?&lt;/P&gt;&lt;P&gt;Milk?&lt;/P&gt;&lt;P&gt;Egg?&lt;/P&gt;&lt;P&gt;Salt &amp;amp; pepper&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Anything else?&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;(If this turns out, I'll change from the mac &amp;amp; cheese to the bite-size corn cakes that I'll need mid month.)&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

      <description>&lt;P&gt;Instead of jalapenos we use those small cans of Hatch mild chopped green peppers.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;This is an old old recipe of ours--but good! &amp;nbsp;I'd just put in half cream corn and half corn kernals.&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;List of Ingredients&lt;/P&gt;&lt;P&gt;2 1/4 cups yellow cornbread mix&lt;BR /&gt;3 tablespoons sugar&lt;BR /&gt;1/2 cup vegetable oil&lt;BR /&gt;3 eggs, beaten&lt;BR /&gt;1 (8 1/2-ounce) can cream style corn&lt;BR /&gt;1 1/2 cups (6 ounces) shredded Longhorn cheese&lt;BR /&gt;1 large onion, grated&lt;BR /&gt;2 large canned jalapeno pepper, seeded and chopped&lt;BR /&gt;&lt;BR /&gt;&lt;/P&gt;&lt;P&gt;Recipe&lt;/P&gt;&lt;P&gt;Combine all ingredients, mixing well. Heat a well-greased 13- x 9- x 2-inch baking pan in 400 degree oven for 3 minutes or until very hot.&lt;/P&gt;&lt;UL&gt;Pour batter into hot pan, and bake at 450 degrees for 20 minutes or until cornbread is golden brown. Cut bread into 2-inch squares to serve. Yield: about 2 dozen&lt;/UL&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

I typically fry them but you could try making them in the silicone mold and baking them.&amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;I use 1 cup self-rising flour.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;2 cups cooked corn&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;1/2 cup milk&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;2 eggs&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;1/2 teaspoon salt.&amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;Pepper to taste. (I tend to use a lot.)&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;Just combine it all and then cook it. I typically either pan fry in shallow oil (if my self-rising flour is a bit dead) or deep fry (if the self-rising flour is especially active. The pan-frying gives you a flatter fritter while the deep frying gives you a rounder, ball-type fritter. Both are very good. (When pan-fried some people call them corn oysters as they tend to come out more oyster shaped.) Right now I'm still using up some dead-ish White Lily flour, so I go more pan-frying than deep-frying.&lt;/FONT&gt;&lt;/P&gt;</description>
