Good morning and happy April. It poured all night and now just showers. Looks like a day when you don't feel like doing anything. Yesterday morning I made bacon, scrambled eggs with potatoes and raisin bread toast and last night we had leftover mac and cheese. Hope we all have a great April.

Thanks Pooky1 - appreciate you getting us going.

Summertime was here yesterday - 89 degrees. Nope, that will not stay although we have had a few years where it hit hot weather in March and stayed that way. Miserable to say the least. Winds come and go and the Santa Ana winds out here can be very dangerous.

My eating is still off track but I manage. Couple days ago I managed to fix some chicken breasts in barbecue sauce and had that with slaw and fruits. My heart MD does not want me drinking coffee, eating ANY foods anywhere other than what I prepare - that ain't gonna happen - and no salt, well I hardly use that anyway and never had except on my watermelon. LOL. I am about 14 pounds under my normal weight and it is getting irritating over the what I am no longer suppose to eat and how to fix it. I weigh 104, give me a break but she says I must go on a heart menu now. Already had my 87th BD so some things I will eat like I want to, too old to start all over.

Not going to be as warm today as yesterday - glad for that as the heat bothers me more now than ever before.

Hope all had a safe April 1st - and nothing but great things will be in store for you the rest of the month.

Happy Easter everyone!

Just left the kitchen after making dressing to eat with roast chicken. I think trucker daughter will get home late Sunday, so am not sure I will be cooking an Easter meal that day.

When I asked for Easter suggestions, no one had an immediate response, and the deadline for answers was Thursday. On Thursday I went to the grocery store and bought a ham, a whole beef tenderloin, and 2 roasting chickens. Husband wants ham, trucker daughter wants chicken and dressing, and teacher daughter wants beef! Of course!

Can't say what we'll eat on what day, but it will be tasty!

Happy April all! Colder here, wind chill 33 degrees. Good weather for lasagna, garlic bread & salad.

@Winifred, I hope you will be feeling stronger.

Good afternoon everyone. Red top. I'm sure food will be great in your house . it all sounds really good and I'm also sure you will have lots of leftovers. Bright and sunny around 50 today. We grocery shopped in 2 stores. I bought 3 family packs of chicken on Sale for 1.69 a pound. While shopping I said to my mil what are you cooking for lunch. She said I don't know. I said we can pick up food order food out. So 67 bucks later we got Chinese food. We ordered extra so we have plenty of leftovers. For easter I made 2 ricotta pies and a chocolate cream pie. Hope you all have a great Easter.

On the menu for dinner tonight, keto fried chicken. I’m going to reduce the recipe and cut the chicken breast into strips. Instead of the spicy mayo, I may just make some buffalo sauce. Serving with celery sticks and blue cheese dressing and either roasted brussel sprouts or roasted asparagus.

KETO FRIED CHICKEN

w/Spicy Mayo Dipping Sauce

Makes 6-8 servings

INGREDIENTS:

FOR THE CHICKEN

6 bone-in, skin-on chicken breasts (about 4 lbs.)

Kosher salt

Freshly ground black pepper

2 large eggs

1/2 c. heavy cream

3/4 c. almond flour

1 1/2 c. finely crushed pork rinds

1/2 c. freshly grated Parmesan

1 tsp. garlic powder

1/2 tsp. paprika

FOR THE SPICY MAYO

1/2 c. mayonnaise

1 1/2 tsp. hot sauce

DIRECTIONS

Preheat oven to 400° and line a large baking sheet with parchment paper. Place chicken on prepared baking sheet.

Bake until chicken is golden and internal temperature reaches 165°, about 45 minutes. (If you go for boneless skinless chicken you'll want to decrease the bake times.)

Meanwhile, make dipping sauce: In a medium bowl, combine mayonnaise and hot sauce. Add more hot sauce depending on preferred spiciness level.

Serve chicken warm with dipping sauce.

Had a lot of ham left over from Easter so few days back I bagged it and put in the Freezer for a rainy day. Also can thaw out some of the slices for sandwiches later when I get the urge - and I will. some of the ham will also be used for seasonings. Works great.

Just do not use food like I use to. Well who does? But at any rate I still manage to fill my tummy each and every day.

The two cats here also eat well. What a nuisance to go out these days Course I got a lot older and not quite as healthy as I once was. I do enjoy using Sam's Club for some of my deliveries - sure makes it nice.

Hope all had a glorious weekend and today is leading all of us to a very nice week - well here is hoping.

Tonight is chef’s salad night at our house. It’s not fancy but it’s a favorite. I like to dress mine with a Walden Farms Calorie Free Dressing or MCT oil and sprinkled with Everything But the Bagel Seasoning.

Hi everyone. Not a real nice day here in Sou Ca; today. Quite chilly, little windy and NO SUN at all. Not good. In a few days suppose to be up in the 80s however. We shall see.

No great cooking but last night did fix a HUGE pot roast. And only me here. Great roast, onions, baby carrots and did not do mashed potatoes but just but some of the red skin potatoes up and cooked them in with the rest. Usually fix mashed potatoes but since no one else was here I did that. Worked fine so have plenty of food tonight. Davey was with his Dad last night helping him and I was not aware he was not coming back home but there is plenty of food to warm up tonight.

Hope all had a great day.
