And, yes I rinse it quickly and pat dry. BUT, then I let it air dry for an hour to create a patina. I smoke the whole, gutted trout, bones and all, with the skin. You might want to check some smoker websites for advice. All that being said, it probably wouldn't hurt to give it a quick rinse and pat dry. IMO.&lt;/FONT&gt;&lt;/P&gt;</description>
