My all-metal Williams-Sonoma garlic press works very well, but it's no longer made or sold by them. They sell other models that aren't as well-reviewed. I believe the Rosle is good, too.

I don't know any garlic press that minces garlic, which would require a knife. They smash it and extrude the mash and juice through little holes, retaining the fibrous matter and skin in the reservoir.

If I can't find the garlic press or want minced garlic, I do it the old way: a knife and a pile of salt, with sticky, garlicky hands afterwards.

I have a two handled metal press with two inserts with different sized holes. Like Noodleann mentioned, it does leave that fibrous material behind and left me looking for another method.

I tried the plastic round two piece disc style that grinds the garlic which turns out a mixed smash, good enough for soups but I wouldn't call the result a "mince".

My favorite is the Jospeh Joseph's rocker. Of course the garlic has to be peeled and I usually cut large cloves in half. I find it does give a nice even mince with no left over materials. It's easy to clean, too.
