      <title>Snowed in with Daughter, Dog and Four Apples-what can I make</title>

      <description>&lt;P&gt;Well my DH just left a few hours ago to catch his flight to Dallas and we already have a ton of snow here in Mi. and now more coming down by the bucketloads.&lt;/P&gt; &lt;P&gt; &lt;/P&gt; &lt;P&gt;So, sitting here feeling cozy with the fireplace going and rest of my family here and was wanting to make something that would be extra good. Only fresh fruit I have is 4 large apples. Now I have all of the pantry and fridge items, ie brown sugar, butter, flour etc., but I am no expert baker and any attempt to make a pie crust would be futile.       <description>&lt;P&gt;If they happen to be Granny Smiths, make apple sauce.  Warm homemade apple sauce lightly sweetened and flavored with cinnamon is a great comfort food.  I guess you can use other apples, too.&lt;/P&gt;</description>

      <description>&lt;P&gt;My mother used to make applies by coring them, peeling and boiling them with those little red "imp" thingies. When they were just beginning to get soft, she stuffed the cores with a mixture of cream cheese, chopped pecans and something else I don't recall. You could make your own choice. Anyway, they were one of my favorite things as a child. Now I can't remember exactly what she put into the filling.&lt;/P&gt; &lt;P&gt;Lesson to us all:  Ask your parents lots of questions about family, favorite foods, etc. Once they're gone,so is the information!&lt;/P&gt;</description>

I left the peeling on the apples.       <description>&lt;P&gt;Crockpot applesauce is delicious and will have the whole house smelling good in no time!&lt;/P&gt; &lt;P&gt;If you want something sweeter, apple crisp couldn't be easier. My favorite recipe is from the Silver Palate cookbook. You can add some oatmeal if you want. I'm sure 4 apples would do just as well as 5.&lt;/P&gt; &lt;P&gt;&lt;STRONG&gt;&lt;SPAN style="text-decoration: underline;"&gt;Apple Crisp&lt;/SPAN&gt;&lt;/STRONG&gt;&lt;/P&gt; &lt;UL&gt; &lt;LI&gt;5 apples, peeled, cored and thinly sliced&lt;/LI&gt; &lt;LI&gt;1 1/2 tablespoons lemon juice&lt;/LI&gt; &lt;LI&gt;1 c. flour&lt;/LI&gt; &lt;LI&gt;1 c. sugar&lt;/LI&gt; &lt;LI&gt;1 1/2 teaspoons cinnamon&lt;/LI&gt; &lt;LI&gt;1/2 c. cold butter or margarine&lt;/LI&gt; &lt;LI&gt; &amp;lt;ol&amp;gt; &amp;lt;li&amp;gt;preheat oven to 350. grease or "spray" an 8 inch cake pan&lt;/LI&gt; &lt;LI&gt;place a layer of sliced apples in the pan and sprinkle with some lemon juice. repeat until all apples are in the pan. lightly press on the apples to even them.&lt;/LI&gt; &lt;LI&gt;process the flour, sugar, cinnamon and margarine in a food processor until the mixture resembles course meal.&lt;/LI&gt; &lt;LI&gt;press the crumble mixture evenly over the apples, making sure the edges are sealed.&lt;/LI&gt; &lt;LI&gt;bake until the top is golden and the apples are tender, 1 hour.&lt;/LI&gt; &lt;LI&gt;best served warm with good vanilla ice cream ~6 portions.&lt;/LI&gt; &amp;lt;/ol&amp;gt; &amp;lt;/li&amp;gt; &lt;/UL&gt;</description>

      <description>&lt;P&gt;Love these apple enchiladas. It can be made with sliced fresh apples that have been cooked down a bit like for applesauce.&lt;/P&gt; &lt;P&gt;I live up near Traverse City and this winder has been nasty...way too cold and snowy. We do not have any place to put the snow anymore. My sons live outside of Detroit and they do not remember having a winter like this.&lt;/P&gt; &lt;P&gt;Ingredients:&lt;BR /&gt; 1 (21 ounce) can apple pie filling&lt;BR /&gt; 1 teaspoon ground cinnamon&lt;BR /&gt; 1/2 cup butter&lt;BR /&gt; 1/2 cup white sugar&lt;BR /&gt; 1/2 cup brown sugar&lt;BR /&gt; 1/2 cup water&lt;BR /&gt; 1 teaspoon vanilla&lt;BR /&gt; 6 (8 inch) flour tortillas - {Pre Cooked - Store bought is great for this, Just be sure to buy Flour Tortillas}&lt;/P&gt; &lt;P&gt;Spoon about one heaping quarter cup of pie filling evenly down the center of each tortilla.&lt;BR /&gt; Sprinkle with cinnamon (I have my cinnamon in a shaker bottle, so I just sprinkle some on each as I am rolling them)&lt;BR /&gt; roll up, tucking in edges; and place seam side down in prepared dish.&lt;/P&gt; &lt;P&gt;In a medium saucepan over medium heat, combine butter, white sugar, brown sugar and water.&lt;BR /&gt; Bring to a boil, stirring constantly; reduce heat and simmer 3 minutes, remove from heat and stir in 1 teaspoon vanilla.&lt;/P&gt; &lt;P&gt;Pour sauce over enchiladas and let stand 45 minutes ..&lt;BR /&gt; Don't rush the 45 minute resting time for the sauce on the enchiladas before baking,&lt;BR /&gt; this step helps to magically transforms the flour tortillas into a faux pasty dough&lt;/P&gt; &lt;P&gt;Bake in preheated oven at 350 degrees F for 30 minutes, or until golden&lt;/P&gt; &lt;P&gt;Each sauce recipe is enough for 6 Apple Pie Enchiladas&lt;/P&gt;</description>
