      <description>&lt;P&gt;&lt;FONT size="3"&gt;&lt;EM&gt;It is a cool 61 degrees in PNW, air is so horrible you can't go outside so I am making my first pot of soup for the season.&amp;nbsp; I have frozen homemade chicken stock, some vegetable, cheese tortellini and a Costco rotisserie&amp;nbsp;chicken.&amp;nbsp; I am all set.&amp;nbsp;&amp;nbsp;&lt;/EM&gt;&lt;/FONT&gt;&lt;/P&gt;</description>

I hate when the trees lose their bright spring green color in favor of twinges of yellow, orange and red.       <description>&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;I made a new soup this week, Red Lentil Soup from The Kitchn website.&amp;nbsp;&lt;/FONT&gt;&lt;FONT size="3"&gt;I had just received some red lentils from Bob's Red Mill.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;I love that this soup is simple and basic. I have lentil soup recipes with tomatoes, spices, and spinach, etc. This one lets the lentils shine. &lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;I added 1/2 cup extra broth, because we like soupier soups.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;RED LENTIL SOUP&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;YIELD &lt;/STRONG&gt;Serves 4&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;UL&gt;&lt;LI&gt;1&amp;nbsp;tablespoon&amp;nbsp;olive oil&lt;/LI&gt;&lt;LI&gt;1 large carrot, diced (I used 2)&lt;/LI&gt;&lt;LI&gt;2&amp;nbsp;large stalks celery, diced&lt;/LI&gt;&lt;LI&gt;1&amp;nbsp;small yellow onion, diced&lt;/LI&gt;&lt;LI&gt;1/2&amp;nbsp;teaspoon kosher salt, plus more as needed&lt;/LI&gt;&lt;LI&gt;1&amp;nbsp;cup&amp;nbsp;dried red lentils&lt;/LI&gt;&lt;LI&gt;4&amp;nbsp;cups water or low-sodium broth (I used Swansons Natural Goodness low sodium chicken broth)&lt;/LI&gt;&lt;LI&gt;1&amp;nbsp;whole bay leaf&lt;/LI&gt;&lt;LI&gt;2&amp;nbsp;tablespoons&amp;nbsp;freshly squeezed lemon juice (from 1/2 large lemon)&lt;/LI&gt;&lt;LI&gt;&lt;EM&gt;For serving:&amp;nbsp;&lt;/EM&gt;Olive oil, yogurt, or other topping (optional)&lt;/LI&gt;&lt;/UL&gt;&lt;P&gt;&lt;STRONG&gt;INSTRUCTIONS&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;*Rinse and drain lentils in a mesh strainer or colander.&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Heat the olive oil. In a medium (2- to 3-quart) saucepan or Dutch oven over medium heat until shimmering. Add the carrot, celery, onion, and salt and stir to combine. Cover and let the vegetables sweat, stirring occasionally, until the onions are soft and translucent, about 5 minutes.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Add the lentils, water or broth, and bay leaf and bring up to a boil. Reduce the heat to low and let simmer, covered, until the lentils begin to fall apart, about 20 minutes.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Turn off the heat and stir in the lemon juice. Taste and season with salt as needed.       <description>&lt;P&gt;&lt;a href="https://community.qvc.com/t5/user/viewprofilepage/user-id/1628"&gt;@peachesncream&lt;/a&gt;&amp;nbsp;&amp;nbsp;&lt;EM&gt;&amp;nbsp;&lt;/EM&gt;I can offer my MIL's recipe for Cheeseburger Soup.&amp;nbsp; It's very good:&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;1 lb ground beef&amp;nbsp;&lt;/P&gt;&lt;P&gt;3/4 cup chopped onions&lt;/P&gt;&lt;P&gt;3/4 cup shredded carrots&lt;/P&gt;&lt;P&gt;3/4 cup chopped celery&lt;/P&gt;&lt;P&gt;1 tsp dried basil&lt;/P&gt;&lt;P&gt;1 tsp dried parsley&lt;/P&gt;&lt;P&gt;1/4 tsp cayenne pepper&lt;/P&gt;&lt;P&gt;4 tbsp butter&lt;/P&gt;&lt;P&gt;3 cups chicken broth&lt;/P&gt;&lt;P&gt;4 cups frozen shredded hashbrown potatoes&lt;/P&gt;&lt;P&gt;1/4 cup flour&lt;/P&gt;&lt;P&gt;2 cups cubed Velveeta&lt;/P&gt;&lt;P&gt;1 1/2 cups milk&lt;/P&gt;&lt;P&gt;1/4 cup sour cream&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Melt 1 tbsp butter in big pot.&amp;nbsp; Stir in vegetables and beef until meat is browned.&amp;nbsp;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Stir in basil, parsley, and cayenne.&amp;nbsp; Stir in broth and potatoes and bring to a boil.&amp;nbsp; Reduce heat and simmer until potatoes are tender.&lt;/P&gt;&lt;P&gt;Melt 3 tbsp butter in medium saucepan and whisk in flour.&amp;nbsp; Whisk in milk until smooth.&lt;/P&gt;&lt;P&gt;Slowly stir milk mixture into big pot of soup.&amp;nbsp; Bring to boil, then reduce heat to simmer.&amp;nbsp; Stir in Velveeta until melted.&amp;nbsp; Stir in sour cream.&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

Nothing but all sorts of soups and I have been cooking from it alot--&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;CHEESEBURGER SOUP&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;3-slices bacon&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;1 onion, chopped&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;2 stalks celery diced&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;2 carrots, finely diced&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;2 cloves garlic, minced&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;1 lb ground beef&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;salt/black pepper&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;2 tbsp yellow mustard&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;1- 16 oz can diced toms, drained&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;3 c low sodium chicken stock/broth&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;2 c shredded cheese plus more for garnish&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;1 c half n half&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;3 tbsp&amp;nbsp; flour&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;1) in large pot saute up the bacon till crisp. Drain&amp;nbsp; on a paper towel.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;2) Add the veggies to the bacon fat and saute for about 5 mins then add the garlic and saute until fragrant.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;3)&amp;nbsp; Add the meat and cook until no longer pink.&amp;nbsp; Drain the fat, if there is any&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;4)&amp;nbsp; stir in the toms, broth, mustard&amp;nbsp; and let cook about 10 minutes, lower the temp and stir in the half/half, cheese and flour. Cook til cheese is melted and soup is thickened, about 15 minutes on low.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;The bacon is for garnish. and taste before you salt it--I add a bunch of pepper tho. Also can add red chili flakes , which I do, for a little kick.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;Now------my DD does not eat/drink dairy, so I have adapted this for her. I use almond milk and no cheese or half/half at all., I add cheese to my bowl later. Another thing, I don't drain the toms and I squirt a bit of catsup at the end of the process, cuzz I think it needs a little sweetness. I also chop up dill pickles for garnish and DD adds a bit of pickle juice to hers. Also I shake up the almond milk with the flour and make a slurry.&amp;nbsp;&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;And --all the chopping--I use my little chopper for that.&amp;nbsp; Saves time by alot .&amp;nbsp; last time I made this, I had a bit of ground pork that I added and---- holy cow--- was it good.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&lt;FONT size="3"&gt;And best of all, this soup taste better the next day.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

      <description>&lt;P&gt;I'm with you.&amp;nbsp; I love soup and made my first of the season this weekend as well.&amp;nbsp; I had picked up a ham, cut all the meat off for sandwiches, etc., and made a broth with the bone. Making some with beans, pasta &amp;amp; carrots for now and freezing extra broth for something different later.&amp;nbsp; It was so nice to be able to enjoy soup again after a sweltering few weeks in July/August.&amp;nbsp; &lt;IMG src="https://community.qvc.com/i/smilies/16x16_heart.png" border="0" alt=":heart:" title="Heart" /&gt;&lt;/P&gt;</description>
