Enoying the fresh green beans and veggies now.

Trim the ends, boil in a shallow pan of salted water. They should still have some crisp to them. Finish with a little EVOO & salt to taste.

My preference is blue lake. Trim, snap, wash. Sauté bacon and onion until bacon is cooked and onion is soft, add beans, cover with water and simmer to required level of doneness, salt and pepper before serving.

Absolutely pole beans. Kentucky Wonders are the ultimate.

Water, ham and beans, cooked until they are no longer bright green and are not crisp. Cook liquid down as the beans cook, serve in a pasta bowl with some very good fresh hot cornbread and butter.

If possible, have peach cobbler for your fruit serving afterward.

I can't do a crunch and "overcook" mine with bacon and onions. For fresh green beans, I will simmer them for 3 or 4 hours. When I buy frozen, I simmer them almost all day.
