I have to admit, I am spoiled - I live in Reno, Nevada and go to our rib cookoff held on Labor Day week and weekend to get several racks of ribs to freeze through out the year. The event has been cancelled this year. I am so sad; but I need to know if anyone has a favorite they get from Corkys or where ever. I usually get at least five whole racks and a few dinners when I go. Much cheaper than here but I only have one rack left, so any recommendation would be helpfull. Not a fan of really heavy smoked meat though. Thanks in advance for any help. I appreciate it.

I love Corkey's short ribs. Have it on auto-delivery. Never fails to please. Has a huge amount of meat on the the bones. The BBQ sauce with it is scrumptious!

Hi, @Blitzens ! My husband and I visited the Rib Cook-off over Labor Day many times when his brother and his wife lived in Carson City. It was fabulous and we had our own judging panel with several visits in any given year. What memories!

we now smoke our own ribs from Smith's (Kroger) or Costco - my husband bought a Green Mountain pellet smoker when we moved to Henderson. We put dry rub on them, smoke for 5 hours at 180 and sauce during the last hour. I mix together whatever sauces we have in the fridge. You may be able to replicate with a stove-top smoker but not sure.

@Blitzens

We always make our own baby back ribs or buy them from a meat market in town that smokes them every Sat.

If you can buy them in town you can make them yourself.

Since you don't like much smoked flavor you can make them in the oven. So easy, yummy & tender.

Pull membrane from back of baby back ribs not spare ribs, sprinkle with salt, pepper & chili powder, double wrap in heavy duty tin-foil tight, cook at 400° for 2 yrs on cookie sheet. You can use any bbq seasoning you want.

At this point you can unwrap to apply bbq sauce & cook on grill for a few mins or you can cook under broiler a couple mins.

These are really good & I prefer these over most any ribs I have ate.

When my sister first told me about it I thought 2 hrs at 400° they will be tougher then an old boot but they are not.

I have noticed some slabs they have in the stores today are smaller so it may only take 1 1/2 hrs to cook.
