Emeril was RR's cohost on her show yesterday. I rarely watch her whole show anymore because I cannot stand her constant use of her hands and arms. But I saw that Emeril was cohosting and I flipped the channel to find him cooking a recipe.

The recipe was a Bolognese Sauce. He was just finishing it, draining the pasta and serving. Now the funny part is this: He broke 2 of Rachel's "must do/must never do" rules!

1) Rachel, when she makes a pasta dish, pours some of the pasta cooking water into her pasta, and doesn't drain the pasta much. Emeril, as he is taking the pasta out of the water says "Whatever you do, you MUST drain the pasta well or else you will drown the pasta and it won't be very good" (Not in those exact words but he did stress no watered down pasta) Rachel said something, can't remember what, but it was kind of under her breath about the water.

2) Rachel's big pet peeve is, and she says this over and over not only every time she makes pasta on her show but when she is on the Q, she hates hates HATES it when someone plops bare pasta on a plate and then tops it with sauce instead of mixing the pasta and sauce in the pan prior to plating. What did Emeril do right after talking about draining the pasta as much as possible? He plopped that big colander of pasta on a plate and poured the sauce on top and left it there; just like Rachel says one should never ever do!! I laughed!!

I know it's to each his own (way of cooking) just got a kick (bam!) out of what I consider a great Chef as Emeril, doing everything the opposite of Rachel on her own show.

Growing up Italian, the pasta was homemade without a pasta machine, but rolled by hand, and the sauce also. The sauce always poured into the pasta in the big pot. Pasta always rinsed and put back into pot and sauce poured over it. The new Generation does it different, but this was Grandma from Italy way.

Does it really matter? I say pasta is good any way (unless it's mushy).

In all seriousness, though, I think it depends on the pasta, the sauce, and the occasion. I recently made a dish of garlic spaghetti that had a lot of garlic, olive oil, and only a small amount of tomato sauce; I did it Rachael's way. When I do spaghetti with meatballs for guests, I do it Emeril's way (much prettier presentation). When I make it just for us, I drain it completely, but I will then pour the sauce over it and mix it together.

Again, I say there's no such thing as bad pasta, so it ultimately ends up being personal preference.

It is a pain at our house because I just like a little marinara but my husband likes his pasta swimming in sauce.I usually put my pasta in a bowl and add a bit of butter, stir to coat pasta then add grated parm, black pepper and just about 1/2 cup of sauce.

My husband just wants about a gallon of the sauce, lol.

I like Emeril's recipes, although his "schtick" gets on my nerves. He IS a good cook but his recipes are more complicated than I like, and I generally don't like the kind of food he cooks up.

However, he has a pecan pie recipe that is to die for; it's an old stand-by at my house.

I guess my post wasn't really to pick on pasta (I love pasta no matter how it's sauced!!) It was just funny about how Emeril did things totally against what Rach always preaches on her shows and when she's at Q. Her face was a little puckered when he did what he did.
