      <description>&lt;P&gt;if i am eating it warm or hot i prefer it to be falling apart tender.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;if i am eating it on a sandwich, i like it trimmed, but still a little fat on it, and sliced as thin as possible......first cut.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;big fan of corned beef hash also.&lt;/P&gt;</description>

      <description>&lt;P&gt;Very tender, but if you slice it against the grain it won't fall apart. Try to slice it with the grain of the meat and it will fall apart in pieces. Taught to me from my meat-cutter dad years ago!&lt;/P&gt;</description>
