Preheat the oven to 400° and lightly grease a small baking sheet with vegetable oil. Set aside.

2. Trim the base of the cauliflower to remove any green leaves and the woody stem.

3. In a medium bowl, combine the yogurt with the lime zest and juice, chile powder, cumin, garlic powder, curry powder, salt and pepper.

4. Dunk the cauliflower into the bowl and use a brush or your hands to smear the marinade evenly over its surface. (Excess marinade can be stored in the refrigerator in an airtight container for up to three days and used with meat, fish or other veggies.)

5. Place the cauliflower on the prepared baking sheet and roast until the surface is dry and lightly browned, 30 to 40 minutes. The marinade will make a crust on the surface of the cauliflower.

6. Let the cauliflower cool for 10 minutes before cutting it into wedges and serving alongside a big green salad.

Interesting. I wonder what it tastes like. Reminds me of the summer that DH worked on a cauliflower farm. We ate a lot of it, but never thought of cooking it this way.

That does look really good. My mom used to roast cauliflower, but without all those spices, so hers was kind of bland. Then she would make her own cheddar cheese sauce and pour it over the top. I like the idea of this one, imagine it has some great flavor. Thanks for sharing the recipe idea. I think cauliflower is an underutilized veggie.

Hmmm .... looks interesting. I love cauliflower and would try this if the spices were different. I don't do hot spices ... esp. chile powder. If I were to try it I would leave out the chile powder.

I may try a small head tomorrow for dinner. Maybe. It does look a little odd though.

I'm always on the lookout for new ways to roast veggies. Looks interesting. The marinade is similar to what I use for chicken breasts, so I can do both at once. I'm wondering if I can whip up the leftover cauliflower in the vitamix for my version of mashed potatoes. Thanks.

I roast cauliflower quite often, but have never tried to do a whole head at one time. And I dearly love cumin; it's one of my favorite spices. This looks delicious and it's on my "Must Try" list! Thanks!

We roast it every week--just put olive oil, salt and pepper, and maybe a little garlic in the pan. I cut it in thin slices (toward the core so they are flat), maybe less than 1/2 an inch, so there is a lot of browned surface on it. I LOVE it! This is so pretty!

Very interesting! I have roasted cauliflower florets and it is so good. I used the following method:

My daughter made this, and our young grandson said, "Mmmm! Can I get a whole plate of it?"

Cauliflower Popcorn

Break 1 large head cauliflower into small florets. (I just did this by hand, cutting off the bottom stem then breaking up the florets) Toss with 1 Tbsp. olive oil and 1/2 tsp. garlic salt; transfer to a greased baking sheet. Bake at 400 degrees for 15-18 minutes or until tender, stirring once. (Make sure you stir it!) Sprinkle with 1 Tbsp. grated Parmesan cheese. ( I put a lot more than that on! =)

The rub seemed like it would have been very flavorful. Was the flavor of the rub primarily on the outside edges? Was the cauliflower roasted throughout? I think I want to try it.

Thanks.

Vabreeze

I haven't made it yet, but I'm planning to. I'll be sure to post a review.

I agree with the others who said it looks a bit scary. I thought it would make a good addition to those Halloween tables so many of you enjoy creating.

I made the "pulled apart" version last weekend using olive oil, garlic, lemon juice, and parmesan cheese. It was amazing! I'm making it again this weekend. I have not tried the whole thing at once, since it was pretty easy to cut it up and package ready-to-eat for lunches.
