    <description>&lt;P&gt;My grandmother made the best coconut cake I have ever tasted. She used a dense cake for the layers and a boiled frosting made in a sauce pan. It was buttery, sugary ,loaded with coconut. It was poured over each layer with extra coconut added before putting the next layer on. She would say you have to have a sturdy cake for this frosting. I was a kid&amp;nbsp; and oh how I wish I had her recipe. I have not tasted another coconut cake that comes close to hers.&lt;/P&gt;</description>

      <description>&lt;P&gt;Tonight I went to our wonderful,&amp;nbsp; privately owned pizza restaurant to get a white pizza there on the counter were two large cake stands with two picture perfect homemade cakes.&amp;nbsp; I choose&amp;nbsp; the last two pieces of coconut cake.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;I always loved my grandmother's coconut cakes.&amp;nbsp; I remember her bring in the coconut, after riding all day there would be a beautiful coconut cake.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Tonight's cake had cream cheese frosting with the fresh coconut.&amp;nbsp; I was always accustomed to seven minute frosting with the coconut.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;I've had bakery icing with coconut on cakes before and didn't care for it.&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;What kind of frosting do you put on your coconut cakes?&lt;/P&gt;</description>

      <description>&lt;P&gt;I ice my cake with a frosting recipe from a&amp;nbsp;&lt;EM&gt;King Arthur's Flour&lt;/EM&gt; cookbook:&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;15 tbsp room temperature butter&lt;/P&gt;&lt;P&gt;1 1/4 cups room temperature cream cheese&lt;/P&gt;&lt;P&gt;3/4 tsp vanilla&lt;/P&gt;&lt;P&gt;1/4 tsp salt&lt;/P&gt;&lt;P&gt;1/4 cup and 1 tbsp coconut milk powder (Chaokoh brand from Thai section of grocery)&lt;/P&gt;&lt;P&gt;4 1/3 cups powdered sugar&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Sift coconut milk powder and powdered sugar together in bowl.&amp;nbsp; Beat butter, cream cheese, vanilla, and salt in separate bowl with electric mixer until smooth.&amp;nbsp; Gradually mix dry mixture with wet mixture at low speed, then beat at higher speed until fluffy.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

      <description>&lt;P&gt;You're bringing back some wonderful memories with the 7-minute frosting. My mother made that for so many cakes and it was just the most wonderful tasting of any frosting! I seldom bake anything "from scratch" as she used to say, but when I think of coconut cake I think of the wonderful, light and fluffy 7-minute frosting!&lt;/P&gt;</description>

It's better the day after &amp;amp; so moist.&lt;/FONT&gt;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;DIV&gt;&lt;DIV&gt;&lt;DIV&gt;&lt;FONT size="3" color="#000000"&gt;&lt;STRONG&gt;&lt;U&gt;Coconut Cake&lt;/U&gt;&lt;/STRONG&gt;&lt;/FONT&gt;&lt;/DIV&gt;&lt;DIV&gt;&amp;nbsp;&lt;/DIV&gt;&lt;DIV&gt;&lt;FONT size="3" color="#000000"&gt;1 yellow box cake mix with pudding&lt;/FONT&gt;&lt;/DIV&gt;&lt;DIV&gt;&lt;FONT size="3" color="#000000"&gt;2 - 6 oz bags Bird's Eye frozen coconut – thawed&lt;/FONT&gt;&lt;/DIV&gt;&lt;DIV&gt;&lt;FONT size="3" color="#000000"&gt;2 c sugar&lt;/FONT&gt;&lt;/DIV&gt;&lt;DIV&gt;&lt;FONT size="3" color="#000000"&gt;1 c milk&lt;/FONT&gt;&lt;/DIV&gt;&lt;DIV&gt;&lt;FONT size="3" color="#000000"&gt;8 oz cool whip&lt;/FONT&gt;&lt;/DIV&gt;&lt;DIV&gt;&amp;nbsp;&lt;/DIV&gt;&lt;DIV&gt;&lt;FONT size="3" color="#000000"&gt;Make cake per package directions.&lt;/FONT&gt;&lt;/DIV&gt;&lt;DIV&gt;&lt;FONT size="3" color="#000000"&gt;On low to medium heat mix sugar &amp;amp; milk to slow boil, stir often&lt;/FONT&gt;&lt;/DIV&gt;&lt;DIV&gt;&lt;FONT size="3" color="#000000"&gt;When it comes to a boil add 3 oz of crumbled coconut &amp;amp; stir&lt;/FONT&gt;&lt;/DIV&gt;&lt;DIV&gt;&lt;FONT size="3" color="#000000"&gt;Don’t cool cake.
