      <description>&lt;P&gt;I am making a yellow cake (from cake mix but I add in extra egg, mayo instead of oil and milk instead of water as box cake calls for.&amp;nbsp; I will make three 8-inch layers, make lemon pudding mix in the meantime.&amp;nbsp; Once cakes are cooled, I will fill the layers with lemon pudding and then cover with a fluffy white frosting mix from Betty Crocker prepared according to box directions and sprinkle with coconut.&amp;nbsp; I will place some pastel jelly beans atop it to give it an Easter egg look.&amp;nbsp;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;You could substitute Cool Whip instead of the fluffy white frosting if you choose and sprinkle coconut atop it just before you serve it.&amp;nbsp; Or you could use whipping cream and you would need to add some gelatin mix to the whipping cream to make it last a little longer.&amp;nbsp;&amp;nbsp;&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;When in a hurry, I have purchased the Athens dessert shells and placed lemon curd into them and squirted cool whip atop them.&amp;nbsp; I have made several different kinds if I had a large crowd.&amp;nbsp; I have placed prepared coconut pudding mix in some, banana cream pudding mix in some and chocolate pudding mix in others.&amp;nbsp; These are quick and easy ones.&amp;nbsp;&amp;nbsp;&lt;/P&gt;</description>

      <description>&lt;P&gt;Glorified Rice. It's white rice with cool whip, crushed pineapple drained , marisino cherries cut in half, and a couple of pinches of salt. Mix all together, taste, and chill for at least an hour or two.&lt;/P&gt;</description>

      <description>&lt;P&gt;&lt;STRONG&gt;Lemon Pudding Cake&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;&amp;nbsp;&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;&amp;nbsp;&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;1 stick butter + 2 tbsps.&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;1 cup flour + 2 tbsps.&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;½ cup chopped nuts (pecans or black walnuts)&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;1 tsp. almond extract&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;1 tsp. vanilla&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Lemon zest &lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;&amp;nbsp;&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Mix with dough cutter and press on bottom of buttered baking dish.&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;(11 ¾ x 7 ½ x 1 ¾)&lt;/STRONG&gt;&lt;/P&gt;&lt;P&gt;&lt;STRONG&gt;Bake @ 375 degrees for 15 minutes.       <description>&lt;P&gt;My menu is simple too and I decided lemon meringue pie would be our dessert. Other good Easter choices would be carrot cake or coconut cream pie. For the chocolate lover, there are so many options! However since our centerpiece is an Easter basket, the chocoholics can get their fill there.&lt;/P&gt;</description>

      <description>&lt;P&gt;I don't have the baking skill, and dislike any kind of cooking as a rule, but my MIL used to make the cutest lamb cake for Easter dessert -- from a metal mold.&amp;nbsp; Covered in coconut and red cherries for eyes; jellybean nose.&amp;nbsp; I think I'll serve rainbow sherbet.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;I only have a kitchen 'cause it came with the house.&lt;/P&gt;</description>

Not really, but both adults and kids like it.&lt;/P&gt;&lt;P&gt;Cake:&lt;/P&gt;&lt;P&gt;1 yellow cake mix&lt;/P&gt;&lt;P&gt;3 eggs&lt;/P&gt;&lt;P&gt;1 stick butter, softened&lt;/P&gt;&lt;P&gt;1 - 11 oz can Mandarin oranges with juice&lt;/P&gt;&lt;P&gt;Mix with electric mixer until blended, pour into 11x13 pan and bake per box instructions&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Topping:&lt;/P&gt;&lt;P&gt;Regular size Cool Whip&lt;/P&gt;&lt;P&gt;1 small package Vanilla instant pudding&lt;/P&gt;&lt;P&gt;1 - 20 oz. can crushed pineapple with juice&lt;/P&gt;&lt;P&gt;Fold vanilla pudding granules, crushed pineapple with juice into Cool Whip, and spread on cooled cake. If making ahead of time, refrigerate.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;</description>

The first time I made this cake I beat the mandarin oranges into the batter....the next time, I added the juice first and then added the oranges at the end and just "hit" the power on my beater for a second or two so that I still had chunks of them. You're right - it's an old recipe. I've had it for years but people still comment on how good it is. I hope you like it too!&lt;/P&gt;</description>
