Best Leftover Turkey Sandwich Ever

Got this recipe from Southern LIving years ago. We roast a turkey breast often just to have these sandwiches. I have laminated this recipe because I lay it on the kitchen counter so we can build the sandwich just like the instructions. The cranberry salsa is what puts it over the top!

The Best Leftover Turkey Sandwich Ever

What you need:

Mayonnaise

Sourdough bread slices

Kosher salt and black pepper

sliced turkey

apple slices

thin red onion slices

Spicy Cranberry Salsa

perfectly cooked bacon

crisp lettuce

Build it! Spread mayonnaise on 1 slice of bread and sprinkle with salt and pepper. (Seasoning sticks to the mayonnaise!) Layer turkey, apple slices, and red onion on bread. Spoon on cranberry salsa. Top with bacon, lettuce, and crown with another slice of bread.

Cranberry Salsa: Yield - Makes 1 ½ cups

What you need:

2 cups leftover cranberry sauce or 1 (14 oz) can whole berry cranberry

1/3 cup chopped fresh cilantro

1 jalapeno pepper, seeded and minced

½ teaspoon lime zest

1 ½ tablespoons fresh lime juice

½ teaspoon ground cumin

¼ teaspoon kosher salt

Preparation: Stir together all ingredients. Serve immediately, or cover and chill up to 1 week.

I had a sandwich very much like this last year in a Southern sandwich shop across the parking lot from the QVC outlet in Frazer, PA. It was delicious and tasted just like Thanksgiving dinner in a sandwich! Thanks for providing this recipe!

That looks like a wonderful salsa. I never though to make something like that. I am in charge of cranberries this year and should have enough for leftovers.

I'm not fond of leftover turkey anything, but the addition of the apples, onions and especially the salsa sounds deliious! Thanks for the recipe!

I have to update my earlier reply.....I decided to make the cranberry salsa today so the flavors would marry overnight....my only advice.....double or triple the recipe....the first batch didn’t make it four hours and we devoured it....so I’m going to the store tomorrow for more cranberry sauce....it is AMAZING!!!!😊
