Yes you can slow cook in an insta pot. I have bought a non stick liner and a glass lid on Amazon so I can do so. I don't prefer it. I like to use my multi cooker to slow cook. It can be done though.

But first.....Google I Pot slow cooker. There is a youtube video which is excellent. I went for more info when I planned on using the IP as a slow cooker - but quickly changed plans. For example: there is a temperature difference between an actual SC vs IP and......it says IP cover isn't snug like SC, so there is a loss of steady heat...............and more. Video references a book written by a lady expert. You might find it interesting - and helpful.

(If you use I Pot as a pressure cooker - then there is no issue with the lid and loss of heat)

Is the temp a little higher beause of the heat escape?

That probably would help. Expert lady was saying - don't be surprised or think ill of the I POT should it take a little longer to cook than you expected....due to some heat loss. She just said....she would still use her crock pot for slow cooking.....so I decided to do my chicken in the slow cooker instead of trying something new. Happy Cooking!

So far that is the only way I have used my IP. I use the regular lid with the vent open and it works just like any other slow cooker I have ever had. Why would you think otherwise? There is a setting for slow cooking and you can select low, regular or high.

A slow cooker may run cooler than the IP. The size of the slow cooker can also spread the food over a wider surface versus a more vertical one. This would make a difference on what you are cooking too. I have four or five slow cookers, 2qt,4qt, 6qt, 8qt, and a dip sized one. I use then for different things depending on what I'm cooking and how many I'm cooking for.

Hi. I don't know this from personal experience, but right now am reading The Keto Instant Pot Cookbook by Urvashi Pitre. She writes that you can use the IP to slow cook but qualifies it in this manner: IP Low = Keep Warm on a regular slow cooker; IP Medium = Low on a regular slow cooker; and IP High = High on a regular slow cooker. So, she says just don't use Low on the IP and then you should be fine. Hope this helps. It makes me want to try using mine to slow cook, which I haven't done because of the negative press on using it that way.

Thats Me.
