Gingerbread dough - how long will it keep in fridge?

I'm making gingerbread dough today. I'll use some of it next week, but I'd like to save the other half for Christmastime.

I know I can freeze it, but my freezer space is extremely limited. How long will it keep in the fridge?

@house_cat I think seven days is the longest I've kept it in the fridge. Usually I make a double batch of dough for cookies and sometimes have baked half and frozen the other half to bake later.

I know it's frustrating to not have enough freezer space. I've often wished I had a separate freezer but, alas no room for one.

My recollection is that commercial kitchens in Connecticut use seven days as the outside date for refrigerated perishables before tossing. (My daughter worked in an upscale restaurant when she was in high school and that's how I learned this.)

We have a small, one car garage. DH sold his car recently because he can no longer drive. I'm trying to convince him that we need another smaller fridge in the garage. So far, he's not biting.

@house_cat Gotta love the guy, anyway, right? But why are they so stubborn? A small appliance like that would pay for itself quickly and the new ones are so energy efficient, plus having the ability to purchase more in bulk for savings and convenience.

And there will probably be a good sale for one some time this month before or on Black Friday.

I have the Food Saver and the Fresh Saver and use them all the time. Even though now day to day I only cook for myself and my significant other I never just do a recipe for two people. Neither does he. Old habits die hard and we both like leftovers.
