Thats a whole other subject though.

we went to the local butcher recently, and dh picked up a couple of chicken breasts. I kid you not, one of those babies served 3 adults as a main course, with leftover.

Does that seem normal? i call them Chernobyl chickens, and no, i havent eaten one in 20+ years.

just gives me the willies thinking about it.

if you get those 'fresh chickens' that are little like under 5 lbs. and run 4-5 bucks they're not as large. I buy them for chicken and dumplings and to make chicken salad out of.

Those others by Pilgrams, Tyson, etc. are pretty big. I end up making chcken tenders out of the big white meat pieces.

We don't know what we're eating today, but, even the salad ingredients now are tainted by all kinds of bacteria.

Your local butcher should be able to tell you the source of his chickens.

Just ask if they are antibiotic and hormone free.

The larger the chicken breasts, the better I like it. Most of the time I am feeding 5-6 people, and if I can get 6 decent size chicken fillets out of 3 large breasts, I am extremely happy.

My farmer friend used to raise hormone and antibiotic free chickens and it was difficult to break even, let alone make a profit. He was lucky to raise a 6lb. chicken, most were 5lbs. and under.

@kittyloo, well, you sure made me smile! I can so identify with you because I have a few "issues" with chicken as well, although it's not as bad as it used to be! Seriously, I have noticed how large the chicken breasts are, and it takes a lot longer to bake them. The last time I made them I cut the Chernobyl breasts in half lengthwise and that worked out much better! I bought a package of "thin" breasts last week, but they were paper thin - not exactly what I was expecting!

I'm a lazy cook, so if I can roast a big chicken breast and a decent sized potato in the same oven and get several meals from that one effort, I'm happy. In fact, there's one of those huge beauties thawing in my refrig right now. Roasted its partner a few weeks back for one hot dinner and then enough leftover for chicken salad as well as a sliced white meat sandwich. Yummy and inexpensive compared to eating out.

Yeah, I could have had some fun finishing the OP sentence but to stay on topic, it takes a lot more than a chicken breast to freak me out. If I wanted to cook a thick one in short order, I would butterfly it.

No, the size of chicken breasts don't freak me out. There are many breeds of chickens and some grow bigger and faster than others.

The average chicken is 3 to 7 lbs. many are taken to market when they are as young as 6 weeks old or sooner.

Some breeds have larger breasts than others. I buy the size that I need. There is always a choice.

Also, when i cook them, I always make extra for a couple of meals....chicken salad, or sliced chicken for sandwiches, casseroles or I even freeze them to use in soup, chicken parmigiana or other dishes later.

Often, I roast a whole chicken or even two. They never go to waste, even though there is only the two of us. Roasting chickens are a good value.

We have to live on more

then grape nuts and shredded wheat with bran.

Grape Nuts and Shredded Wheat probably aren't safe either, but I eat Grape Nuts almost daily in my yogurt. Are you adding bran to your Shredded Wheat or do they have Shredded Wheat w/Bran now?

yeah, it's made by Post and is 36% fiber ! I have to eat plenty of fiber to keep from getting constipated and causing other problems. My PA told me Metamucil, also, add the sugar free Metamucil to orange juice and drink it before it turns all lumpy LOL My husband hollers "horse food go stand in the field".

@SharkE, I'm hypothyroid, so constipation comes with the territory. Besides the Grape Nuts, I add whole flax seed to my yogurt. It makes a difference.

I think the mass supermarket chicken breasts are suspiciously large in size. Our local butcher carries Murray's chicken (the original guy who did Bell & Evans) adn they are literally half the size. If not less! We travel a bit and chicken breasts from Italy to Costa Rica are always so much smaller in size, and so much tastier - free range, humanely raised and never fed anything suspicious.

Yes it is scary. I was watching an old Lucy show and they had a house full of chickens. 1960 chickens don't look anything like what you see today.

Chicken used to be a staple here. Not so much anymore. I get a strong chemical taste from most.

When I do buy chicken I get organic air chilled when it's on sale at wholefoods, with my prime membership and amazon card so it's not quite so expensive.

Food is getting scary, especially meats. I've been going to a local butcher instead of grocery store for everything but chicken (lucky his pricing is very competitive) and have been very happy with his offerings.
