My mom often made an eye round like you do.

She loved beef. She told me they ate mostly chicken growing up, their own chickens

After she roasted the eye round, she had to slice up some for dad and cook his a bit more, he always wanted his beef well well done.

I love medium rare.

I cook for my kids and grandkids every Sunday.

I like a chuck roast in the crock pot.

I don't like my veggies cooked with my meat, I do them on the side.

Mostly potatoes, carrots and onions.

There are rarely leftovers after we all fix a plate.

It's rare but whenever I find a bone-in roast, I grab it.

Most roasts I find are boneless, the bone has the flavor

@ECBG

a chuck roast.

dredge it in some flour.......salt, pepper, garlic powder, onion powder

sear on all sides using a little canola oil or peanut oil or olive oil . deglaze pan with red wine, stock, or even water.

place in large roaster and roast it at about 350 for at least three hours.

with about 1/3 cooking time left, add halved potatoes, carrots, quartered vidalia onions, and sometimes stalks of celery cut into thirds. place lid on pan.

this should create a lot of natural juices/gravy and i add one jar of brown gravy or a packet of beef gravy made with milk instead of water. to make it a bit thicker add in some flour that has been mixed with water or stock or more red wine.

cannot wait until the colder weather comes around!

Then I put one or two pieces in the freezer. I can take care of my roast craving and not have a ton left over. I can usually get my first meal and then enough for a couple of sandwiches, or some roast beef hash.

cookin

I don't cook many roasts anymore. Have been trying to buy organic, grassfed beef and those roasts are very expensive!!! But if I do find a sale on them, I prefer a chuck roast, cooked low and slow as for a pot roast dinner. We don't eat much red meat so that will give me a couple meals. Love to turn a pot roast dinner into a hearty beef/veggie soup with the leftovers. And the smell----is heavenly!!

Once a year, at Christmas, we treat ourselves and serve a standing rib roast at our family dinner. It is always soooooo good. My mouth is already watering.

I've been watching this thread, and was hoping that there'd be a response for something other than a chuck roast, eye of round or prime rib!

I love all 3, BUT, what I'd like to know is this:

A million years ago when we'd have 'roast beef' for dinner, what was the cut? I had a girlfriend whose mom made roast beef for dinner every single Sunday, and boy was that good!

Nice and rare, tender and juicy, NOT prime rib, NOT eye of round, & Lord knows, not chuck roast.

Anybody?
