Since today is trash/garbage pickup, we did our usual last night of cleaning out the Fridge. Always seem to find enough to NOT have to prepare a special meal. We did that and so now is time to start over.

I am thinking tonight will be a good night for a pork roast - perhaps with fresh collards and mashed potatoes. Will also cut up a cuke and put it in vinegar - love that.

Still cold out here in Sou Cal and nope, not too sunny, well as of now daylight has not broken but suspect a lot of clouds again and perhaps some snow flakes or at the least, some rain.

Have a great day - eat well.

Tonight, I sauteed ginger and garlic, then added ground pork, gently cooking until liquid was evaporated, usually not much from the pork. I had some Asian ingredients so put those in, added some of my chilis from the freezer, then minced green onions and cilantro, and served over rice, I just ate the meat. This is one of my best creations, simple, yummy, inexpensive, and is ready in a very short time.

I bought Simply Asia, a dry spice mix, at Costco, which contains garlic, ginger, sesame seeds regular and black, red pepper, etc., and added some to the mix, then added more to my serving on top, crunchy and delicious.

Last night, I was going to make BLT sandwiches, but couldn't find the bacon, turns out DH put it in the freezer, so found most of a package of thinly sliced mortadella with pistachios which I bought at Costco a week ago, I cut it in strips and fried some to see what they would taste like, and would you believe, it tasted just like bacon, DH said better, very thin and crispy as can be, so melted some Jarlsberg cheese on toasted rolls, added the strips, and topped with diced iceberg and tomatoes, both mixed with mayo. I ate some strips and a salad.

Windy and rainy here, supposed to be more tonight, but as usual, I will believe it when I see it.

My girl pup takes her time and I mean a lot of time, to do her business, while the male gets right to it, lol, but when it is raining, she gets it done pronto, lol, so another reason I love rain.

Someone else did the cooking. Ordered a wrap containing diced chicken, spinach, tomatoes and cheese. There was a really good sauce that I'd describe as salsa mixed with Miracle Whip. Some crumbled bacon would have been a nice addition, but being as I was in a restaurant, I couldn't add it.

Last night, I made boneless, skinless fried chicken thighs, along with an avocado, tomato, Spring greens salad, I ate Bread and Butter pickles with my chicken.. Tonight, DH is picking up a pizza for himself, so no cooking for me, yay.

Tomorrow, I will make a bacon/sweet onion marianara sauce with Italian green beans as a side, havn't decided which pasta to use.

Still rainy here, wonderful, we need it so badly as there is the threat of another draught hovering, hopefully this will eliminate that.

Had blizzard conditions in eastern PA yesterday, so we still have a fire going in the fireplace. I'll be grilling mesquite marinated chicken breast and sliced zucchine over the fire later on today. Have not cooked over the fire in a while, so this will be fun. Probably our last chance this year.

Just me and the little girl tonight - Davey and Ricky are cruising elsewhere. LOL. May fix her a frozen kids meal - you never know what she will or will not eat on occasion. Me? Would love a tomato and/or avocado sandwich but am out of both and have NO desire to pack up the little one and head to the store. I may make myself a grilled cheese sandwich - that will work.

Tomorrow morning Leah and I are headed to church. Then I will take her to Sherry's as I have a zillion things to do on Monday. Davey will be home tomorrow night as he has school Monday - well of course.

Super cold here and very wet. Hope all had a great day.

Last night, I made Ree Drummond's Snow Peas with Beef recipe from The Food Network, but I tweaked it, as I usually do, lol. I seared the flank steak in a hot cast iron skillet, then put in a waiting pan, had already cooked the snap peas, like these better than snow peas, then added these to the pan with green onions and a little of the sauce, not all of it as Ree suggests, very rich, and served on rice, delicious.

Sunny today and warm enough in the sun for the pups to be outside, but still cold if not in the sun.

I hope everyone enjoys the week.

Went to Aldi's late afternoon yesterday and got one of their enormous Supreme Pizza's - they are so very good and so very inexpensive. Cannot remember if it is 18 inch or 16 inch but it cost only $6.49 - cannot beat that and it is a lot of good eating. Even it does not last long in this house. I was tired and Davey's Dad was here helping me with an outside door in the carport so in addition to him it was Davey and Ricky - the little girl was at Sherry's after being here most every day for a week - but had things to do with Ricky and it is impossible for me to take both little ones when there is a special thing for only one of them. I DO need more help but am having a difficult time in find any. Oh well, we are surviving. Course when I go to Aldi's I always find something else to buy. LOL. Love that store.

Not as cold this morning as most mornings - does this mean that perhaps the frigid cold is leaving us? Sure hope so. Ricky woke up earlier and I groaned as that usually means he will be a bearcat as he did not go to sleep as early as he usually does - but hopefully he is back to sleep. Uncle Davey handed him his (Ricky's) I Pad before leaving to catch his first bus to school and he has been quiet ever since. Am NOT going to poke my head in there and look. LOL.

Have a great day one and all.

I plan to make some new recipes, including an Indian Butter Chicken dish in the Instantpot I found at two sleevers dot com. I normally don't like Indian food but this is one I'm willing to try! Also found a recipe for Radiatore with Spinach, Pastry Puff Pizzas from various sources.

Today it will be pasta with steak cubes and marinara, bread, and fruit cocktail.
