      <description>&lt;P&gt;The other night I was making something and needed softened butter, but only had butter in the refrigerator.&amp;nbsp; I used my vegetable peeler and "peeled" the hard butter.&amp;nbsp; It softened quickly and I was able to complete the recipe.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Do you have a technique for quickly softening butter?&lt;/P&gt;</description>

      <description>&lt;P&gt;&lt;STRONG&gt;I put it in the microwave, but just for a few seconds at a time, and I keep checking it. Maybe 5 or 10 sec. depending on your microwave's power.&lt;/STRONG&gt;&lt;/P&gt;</description>

      <description>&lt;P&gt;&lt;FONT size="4"&gt;There's always the microwave on low power but I think butter softened that way changes the texture of many recipes.&amp;nbsp; I do that only in an emergency.&lt;/FONT&gt;&lt;/P&gt;</description>

      <description>&lt;P&gt;Butter topic twice this week.&amp;nbsp;&amp;nbsp; LOL&amp;nbsp;&amp;nbsp;&amp;nbsp; I always have a small amount out on the counter in a covered dish.&amp;nbsp; If more is needed for cooking purposes - quick zap in the microwave - or - if oven is preheating for food&amp;nbsp;dish to go in to bake...............I put the butter (in a safe oven dish)&amp;nbsp; in the oven for a few seconds.&amp;nbsp;&lt;/P&gt;</description>

While reviewing all the different recipes I've collected for this dish over the years, found an easy way to melt&amp;nbsp; butter that will need to go into the casserole.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Normally would&amp;nbsp; microwave ithe butter, but the recipe suggested draining the briefly-boiled vegetables, still keeping them in the pot, and then throwing the cold or room temp butter on top of the hot mixture while getting together the rest of the casserole.&lt;/P&gt;&lt;P&gt;&amp;nbsp;&lt;/P&gt;&lt;P&gt;Now why didn't I think of that, instead of dirtying a separate bowl to melt the butter?&amp;nbsp; No wonder I use so many utensils and dishes just to cook one meal.&lt;/P&gt;</description>
