Update on Chicken Feet

I made chicken stock with the chicken feet and a couple carcass that I had frozen. It wasn’t bad cleaning the feet. I didn’t gag or get queasy. But I have to tell you this is the best stock I ever made. Because of the feet it is loaded with nutrients and collagen. The stock gelled when I refrigerated it.

One website called it liquid gold. I can see why. I will be making this again.

Thanks for the update, glad it worked so well for you!

My son's best friend is a hunter, so my son and family get deer, goose, duck, etc., frequently. I wonder if he's balk at eating soup made with chicken feet. Hmm. Or duck or goose feet, for that matter.

I know they are full of flavor. When I was in Asia once, I went to a movie with a friend. Instead of eating popcorn, everyone buys a bucket of deep fried chicken feet. First they scrape them through their teeth to get what meat there is off them. Then they just sort of suck on them. Sounds gross, but they were actually quite good.

When my kids were little, I always bought chicken feet for stock.

There's a little tendon where if you pull it just right, the toes will move. I used to chase the kids around the house, and they'd squeal w/ horror/delight.

Fun times.

You're right about the gelling factor! I remember once when I used a lot of feet, you could've cut shapes out of that stock once it cooled. It was like rubber!
