Hi, @alicedee—

Stir together:

3 1/2 cups crushed vanilla wafer crumbs (I use an 11oz box)

1 cup confectioners sugar—I use a little more. Maybe 1/4 cup.

1/4 cup cocoa. I throw in extra.

1 cup finely chopped pecans. I use about 1/2 cup. I’m not crazy

     about nuts

Stir in 1/3 cup light Karo and

1/3 cup light or dark rum. I use Sailor Jerry’s spiced rum. It has caramel flavoring and is not as tangy as regular rum. And I use a few extra shots because my teetotaler mom did!

ETA roll in 1 inch balls and store in air tight container. It makes about 4 dozen.

I must admit, it's lovely to have adult daughters who ready and willing to share some the baking and cooking. One daughter is making the cookies, the other is making the Christmas cake. I usually bake several varieties of cookies, it differs year to year. We do a big Christmas Eve, Christmas breakfast and then a casual Christmas dinner. This year, I'm free to make what I want to make. I'm going to bake a couple of dessert breads; an apple bread and a cinnamon bread. I'm also going to make one of my favorites, a big bannana pudding. We celebrate Christmas the entire week so there's no such thing as too much food.

I hate to be a party pooper, but I bake/prepare no sweets because I am a diabetic. For people who have diabetes, the holidays are very difficult-----sweets are deadly. I love everything sweet. Then the big diabetes was diagnosed and sweets were over. There are no substitutes. I have had nothing for over two years that could be called a dessert or even a sweet snack.

By the way, fruits are not sweets. Chocolate or a grape? No contest. So, my Christmas meal is limited as was my Thanksgiving meal and Halloween candy and birthday celebrations.

Everyone should be aware of sugar content. I never thought about diabetes until the dr. said I have it. It is not a disease that can be cured, so it's for a lifetime.

Be careful.

Merry Christmas!

tea

From Thanksgiving on I bake. . . Peppernuts, Waffle cookies, Orange Slice Oatmeal cookies, Frosted Sugar cookies, Monster Bars, Cinnamon Rolls and Teddy Bear Breads (My youngest son, 28, is baking 4 tomorrow for select friends. I baked them in multiple when I was a child care provider.). One of my grandsons has already requested homemade pizza for our Christmas dinner; so be it!
