We found a new brand we like, but they come only in family packs. In the past when I've frozen rolls or bread, no matter what I do I get ice crystals. I've used freezer bags and wrap them in foil before I put them in. Would they be better in a Lock 'n Lock container? And other advice? TIA!

I never have much luck with freezing bread but I do know that when you remove it from freezers you have to scrape off ice crystals and put in new container or bag...this works about the best for me to keep it from getting doggy....oops soggy

I have found myself doing this a lot with bread and rolls to keep them from getting moldy down here in southwest Florida. Would be nice if the stores offered more half bread loaves and rolls in "bulk" form.

We have so-so luck with hamburger buns, usually okay. But we have no problems at all with freezing bread in its package. We alway remove the plastic holder and replace it with those wonderfu doohickeys clamps of which I can't remember the name.

I rarely have issues with ice crystals, but I store mine in a chest freezer that doesn't have auto defrost. The defrost cycle causes freezer burn and ice crystals quicker than if they're in a freezer without defrost.

I freeze 90% of my bread, and I'm really picky about the texture of my baked goods. The only time it's an issue is if it's in there way too long.

We freeze bread and rolls all the time, now that we are empty nesters.

There is no problem, but I think that's because we have a chest freezer, in the garage. Nothing ever gets freezer burn. These freezers keep a steady temperature, plus they aren't being opened throughout the day, letting in air.

Absent that, there are a lot of good suggestions in this thread!
