Pick a Chef

If you could pick the brain of any chef who would it be? I'm very fond of Alton Brown and enjoy learning from him. I don't only like things shown to me, but explained why they work like they do or have to be executed in a certain way.

Next to Alton explaining why, I like Ina. Also, Country Kitchen on PBS explains things, too.

After those, mothers and mothers-in-law (and relatives) always give tried & true kitchen advice.

Totally agree! Alton, Cooks' Country and America's Test Kitchen are my favorites. They explain the science behind why some ingredients are necessary in a recipe.

I totally agree but in reverse. ATK is my go to. They test multiple versions of each recipe and gives the reason why each ingredient is used or replaced. Alton Brown Good Eats is more entertaining for sure. I attempted my first turkey using his fool proof recipe and it came out great. I wish he still did the series.

Tired of it being the Guy channel. I've also enjoy watching Ina. I've learn coating items such as cranberries, raisins in flour for baking prevents sinking.

Agree with all the answers so far.............. BUT...........I would have loved to know Justin Wilson, and Jeff Smith......and now I would love to meet Jacques Pepin..........

Ree Drummond. She may not be the most talented of all the t.v. chefs, but she seems well rounded and gifted in many different ways.

Ina Garten! I know how to cook--don't need help in that way, but I would love to talk to her about party planning, menus and foods that you can make ahead and are simple but make an elegant meal. What elements do you need in meals now?

Honestly, I like all the cooks who post here, and in Gooseberry Patch and Taste of Home. They are more like me and have the same tastes in foods it appears. JMHO

There are many good names above, e.g., Thomas Keller, Mario Batali, Alton Brown, et al, and you couldn't go wrong with any one of them; however, the one chef that I think could teach me the best is Chef Michael Simon. I'd be happy just knowing what he has forgotten.

I've never made an Ina Garten recipe that I didn't like, but I must credit Rachael Ray as the person who got me started cooking with her condensed cooking tips and tricks. I know she has a lot of critics and she certainly doesn't have the encyclopedic knowledge of Alton Brown or the chef credentials of some of the others mentioned above, but her 30-minute meal concept opened my eyes to easy ways to prepare meals after a 12-hour work day and ignited my love of cooking.

Tyler Florence is my favorite.

Least favorite is Ree Drummond - her recipes are loaded with fat and remind me of cafeteria food.

If I was going to have one of them cook for me it would likely be Mario Batali. As far as "picking someone's brains," I'd have to go with Thomas Keller or Jacques Pepin.

the two i enjoy listening to the most are tom colicchio and eric ripert......excellent chefs AND restauranteurs.....both highly respected in the kitchen and in the restaurant business world.

I absolutely love Eric Ripert. I think he is an amazingly talented chef and I bow down to him. One day, I shall dine at Le Bernardin. And life will be complete. Right after I marry Leonardo DiCaprio.
