topic What is Heritage Pork? in Kitchen

Went shopping today and looked at the meat counter and saw heritage pork. It was a roast and some slices had been cut off as pork chops (bone in). To say it was well marbled is an understatement. It actually looked like pork from a long time ago.

Needless to say, I got 2 pork chops. I breaded them and pan fried them and when they were done, just about all the fat had disappeared and what was left was so moist. Really good.

They could have called it pork from years gone by or extra well marbled pork. But by calling it heritage pork, they could charge $14.99/lb.

Has anybody else come across this?
