Spagetti Squash

For years I have wanted to try spagetti squash, but alway decided against it because I knew that it would be too hard for me to cut. So, while at Trader Joe's about 4 weeks ago, I got a small one which then just sat around. I am only 5'2" and my kitchen counters are quite high plus I really don't have any upper body strength. So, yesterday it occurred to me to put the cutting board into the sink which gave me more power. Was able to cut it and then bake it. After scraping the spagetti out, I sauteed an onion and a couple of plum tomatoes, seasoned them with sale, pepper, carlic powder, cayenne, and some herbs, added the squash and came up with the most tasty dinner.

I have quite a bit of the squash left, so now I can look forward to a couple more dinners. I am sure there will be more spagetti squash in my future.

I just bake mine whole in the oven. Once it's cool enough to handle I cut it. As in microwaving, the skin becomes soft and is easily cut.

I finally learned to just bake it whole first in the oven too. I poke a few wholes , lay it on parchment or foiled sheet . Bake. Cut it after 15 min cool down. Easier to remove seeds that way too IMO.

You can also put it in a pressure cooker with a little water to steam it until it's cooked, let it cool and scrape it out of the skin and dress as desired.

I watched a video where they cut it 'vertically'.

(you'll end up with several small circles)

The strings came out much, much easier.

#GameChanger
