The key is cumin and cinnamon - (just a tiny bit of cinnamon but makes such a difference). Just meat, onions, bell peppers, big can of whole tomatoes, 2 cans black beans cumin, cinnamon and garlic powder.

My recipe is super simple, but good enough for me. I use Bush's Chili Magic. I think the can calls for one pound meat and one can diced tomatoes added to the Chili Magic. I don't like that much meat so here's what I do: I use 2 cans Chili Magic, one pound ground beef, one small diced onion, and two cans diced tomatoes...usually like one fire roasted and one regular flavor. Brown meat and onion, then add in canned items...I usually add a bit of water, too. I simmer it gently for a couple of hours so the tomatoes break down. The Chili Magic directions say heat for 15 minutes or so, but no way for me. Those tomatoes have to simmer and eveything mingle. I also add in what ever I'm in the mood for...always some Tabasco sauce for more kick, more black pepper, extra chili powder if I think it needs it. Sometimes some tomato paste or even ketchup if it needs more tomato flavor.

They have these at Walmart and most grocery stores. They're usually with the canned beans, I think, but can be hard to find sometimes, though. Here's the pic:

This is the only Chili DH wants to eat. You can use 2 lbs chili meat or lean hamburger. DH likes it better with some steak in it. He says the chili grind meat is way too greasy.

1-2 T olive oil

1 lb sirloin, cubed

1 lb ground beef

1 large onion, finely chopped

1 bottle of beer (DH uses a bottle of his homebrew)

1 14.5 oz can diced tomatoes

1 c strong coffee

1 T tomato paste

1 T chili sauce

1 T cocoa powder

½ c finely chopped mild jalapeno pepper

¼ c brown sugar

1 T heaping of cumin

1 t heaping of coriander

1 t cayenne pepper

1 t sea salt

2 15 oz cans kidney beans

1 15 oz can white Navy beans

2-3 large carrots, carrot chips or 12 baby carrots cut up

In large stock pot, heat oil over med heat to brown sirloin first then the beef.

When meat is lightly browned add onions.

Add the beer, tomatoes, coffee & tomato paste.

Add sugar, spices & kidney beans.

Reduce stove to low & let simmer for an hour.

Add white beans & carrots, simmer for another hour or two; longer is better.

Season as needed.

I use to make it from scratch, Now I fry up (in my Ninja slow cooker) some burger, onions, celery, red, green and yellow peppers all cut up into little cubes/slices, shredded carrots and whatever else you like! My secret, 4 or 5 cans of store bought chili- Hormel-Campbell's-Bushes- different flavors and brands and add some black beans and kidney beans and cook in for 6-8 hours adding the spices 2 hours before you serve it! It still tastes like homemade and it's simple!
