When he does, the first request he has is the recipe my family has about once a week:

Cottage Potatoes:

Instant mashed potatoes and ingredients needed to make them

1 - 1/2 Tbsp. dry minced onion

1 cup cream-style cottage cheese, large curd

Decreasing water by 1/2 cup, prepare potatoes for 4 according to directions on the package, but add onion to the boiling water before adding potatoes. With a fork, fold in cottage cheese. Turn into 1- quart casserole, dot with butter, sprinkle with paprika. Bake 30 minutes at 350 degrees.

This makes 4 servings. I always double the recipe for our family! Enjoy your son's visit!

My sister's MIL makes this dip that is a great side for her game days and parties. It is a Chili Cream Cheese Dip.

8oz cream cheese, soft

2 cans chili without beans (hotdog chili in the little can, she uses Varsity brand after the Georgia Varsity hotdog shop in Atlanta)

grated pepper jack cheese

Layer the cream cheese, then chili then pepper jack. Heat in 350 degree oven till bubbly and melty. Serve with corn chips. This is a sturdy dip, so the big scoop Fritos are really good for it. This will go in a hurry!

You could also do loaded baked potatoes or twice baked potatoes. Just bake the potatoes and spread the topping out, sour cream, cheese, ranch dressing, green onion, chili, bacon, bacon, bacon.....some bacon. Now I want a loaded baked potato or a stuffed potato...that is a baked potato stuffed with pulled pork BBQ and cheese! YUM! Don't forget the butter!

Good morning, @terrier3. I understand a Mother's urge to pamper her son when he comes home. The following recipe will go a long way toward that goal. I'm sharing the whole recipe, but it's the onion rings I propose to accompany your own special burgers.

Monterey Jack Burger with Ranch Onion Rings
The Chew | Michael Symon | February 29, 2016

Ranch Onion Rings
2 Vidalia onions (sliced ½-inch thick and separated into rings)
Dredge:
1/4 cup cornstarch
½ teaspoon baking powder
1 pinch salt
1 pinch cayenne
Batter:
½ cup cornstarch
½ cup all-purpose flour
½ cup Cool Ranch tortilla chips (finely crushed, divided)*
½ teaspoon baking powder
½ teaspoon garlic powder
1 pinch cayenne
1 pinch salt
1/4 cup beer (chilled)
1/4 cup seltzer (chilled)
½ cup vodka (chilled)
canola or rice bran oil (to fry)

Burgers
2 tablespoons olive oil
4 beef burger patties
4 thick slices Monterey Jack cheese
4 potato rolls (toasted)
kosher salt and freshly ground black pepper (to taste)

For the Ranch Onion Rings: in a large pot, add 2-inches of canola oil and preheat to 360ºF. Line a sheet tray with wax paper. Place a baking rack inside another sheet tray.

For Dredging Station: in a large shallow bowl or baking dish, combine cornstarch, baking powder, salt and cayenne.

For the Batter: in a large bowl, add cornstarch, flour, 1/2 cup ground chips, baking powder, garlic powder, cayenne and salt, and whisk to combine. Add the chilled beer, seltzer and vodka and whisk to combine.

Dredge the onion rings first into the cornstarch mixture. Coat in the batter, shaking off any excess. Finally, coat in remaining chips. Transfer to wax paper-lined tray and repeat with the remaining onions*. Fry the rings in batches, 4-5 at a time until golden brown and crispy, about 4 minutes.

Remove to a draining rack and season with salt.

For the Burgers: season the burgers on both sides with salt and freshly ground black pepper and make an indent to the center.

Preheat a cast iron grill pan over medium-high heat. Drizzle some olive oil in the hot pan and add seasoned burger patties. Cook without moving until a nice crust forms on one side, 4-5 minutes

Flip and finish cooking on the other side, another 2-3 minutes. In the last minute of cooking top each burger with a slice of cheese.

To serve: place a burger on the bottom half of a bun then top with a few crispy onion rings. Add the top bun then serve.

Helpful tips:
- To help melt cheese, add a couple tablespoons of water to the grill pan and cover with a metal bowl.
- Make the onion rings before the burgers. Keep warm in a 200ºF oven, on a baking sheet fitted with a cooling rack.
- Chef Symon said the finished onion rings can be frozen and re-heated.

* Reviewer’s comment: I made the onion rings over the weekend and they were awesome!! There is a clarification that needs to be made to the ingredient list and instructions. The ingredient list says to use 1/2 cup of finely crushed chips, divided. Well, to me that means I am dividing the 1/2 cup. Actually, you do not divide the 1/2 cup of crushed chips, they do get added to the batter. To make the instructions clear you need to finely crush the rest of the bag of chips so you can use them to coat the onion rings after removing them from the batter. I hope this helps those of you who attempt to make these delicious crunchy onion rings.
