Personally I like cauliflower "rice" better than the real deal. Steamed, it makes a very good "potato" salad, too.

With pizza I'd probably prefer just having one slice of the real thing.

Like you I have diabetes 2. Rice and potatoes make my blood sugar rocket.

We were invited to dinner at a home where they eat all very low carb. She made a cauliflower crust pizza. OK . It looked good - she used cauliflower, egg and cheese to make the crust then pressed it in a pizza pan and added a lot of garlic.Baked it then took it out and added sauce and traditional toppings - sauce , pepperoni , peppers, mushrooms etc. I could not wait to taste it. OMG - it was awful. Worse than awful. Those topping did not go well with the taste of cauliflower IMO. The Hosts loved it. DH & I came home and had a sandwich, because we were starving. We had only had one piece of this gosh awful concoction. I have always felt you can't just use cauliflower everywhere insrtead of potatoes or a starch and this pizza was proof.

There are different variations of the cauliflower crust. Some I like better than others. That said, I don't like it well enough to go through the process of making it when there are tastier ways for me to use it. Like the cauli rice and faux mashed potatoes.

One big problem that I had to overcome when I went low carb was the expectation that I could make vegetables taste just like bread or noodles, or whatever. I LOVE zuchinni noodles prepared all different ways. But none of those ways taste like real noodles. And cauliflower rice does not taste like rice, and crust does not taste like bread crust, etc.

I had to change my mindset. Do they taste like the high carb alternatives? Not even close. But I had to also admit that they are pretty darn good ways to prepare my veggies to make them less boring. After a while, the cravings for the processed stuff do go away.

For the pizza, I do agree that some of the traditional pizza toppings do not go well with cauliflower. But when topped with alfredo sauce and grilled chicken and cheese, it's delicious (in my opinion). If I want something that taste more like pizza, I make a crust with almond and coconut flours. Or I use a low carb tortilla for a thin "crust."

kachina, you bring back such memories.

I made that cauliflower cheesecake, and you're right. It wasn't very good, but I was so hungry during that time period (crazy strict dieting I could never do today), that I was happy to eat it.

Now, another thing that I made at that time was candied grapefruit rind. I think it was in one of the early WW cookbooks. You took the rind from your allotted serving of grapefruit, and cooked it down slowly in diet cherry soda. I only made that once, because it was so bitter. But, again, I ate it because I was hungry.

I made many of those WW dishes.

I have followed many diets and food trends. No matter what, no way would I ever serve only a cauliflower crust pizza just because I liked it. Why not order a regular pizza and make the cauliflower one too. Offer both. I'm not saying a vegan should cook a pot roast. There are many delicious vegan dishes that can be served . But to make cauliflower crust pizza the only choice seems very pushy and kind of selfish. I love veggie burgers but trust and believe they are not a hamburger meat burger, lol. It is polite to think of the guests.
