Good Morning one and all. Still have trouble with these months flying in and out - and this first week of June out here in my part of Sou Cal will be HOT by the end of the week. Then, the temps will dip again. Sigh.

Last night I warmed up skewers from the night before - minus the skewers of course - and heated it up with chopped potatoes. Actually very tasty. Still a lot of that mixture left so need to come up with something to use it in either for tonight or tomorrow - it was really good!!!

Soushi, we miss you and hope your days are easing a bit.

My energy levels are decreasing and I can tell it - cooking, while I love it, is just getting more and more difficult. Even when I lived alone - ahhhh, for the good old days - I still cooked decent meals. With my current house full, the energy seems to leave a lot quicker. Course I am getting older than dirt so what can I say. I hope to get a bit more help from the kids Mother/grandmother the rest of this week - I need it. Now if anyone can tell me how to get a 15 year old boy moving and doing something worthwhile, would appreciate it. LOL. Spoke briefly yesterday while waiting for Davey after school and he said he had never seen a kid as lazy as he is and he is failing that subject - this is in continuation school. Now that is lazy. Continuation school HAS NO homework so how easy can life be? He sits in class and does very little.

Hope one and all have a great day - may toss a roast in the slow cooker and this time toss in potatoes and another veggie with it. We shall see.

Seems like quite a few people are, or headed for, a heat waver. We will be 100 in a day or so. Sigh. I am NOT ready for hot weather quite frankly.

Morning all,

Sorry, I am having a hard time coming here to chat. Not sure why, but it is what it is. I'll try to do better.

Winifred, thank you for starting us up again. Sounds like you need help from your family. Guess it is time for a good sit down talk with everyone. Have no advice for Davey. Sure must be frustration.

I'm starting to do some baking again. Making this for 2 gals coming today to help me unload my china cabinet.

Amish Sugar Cream Pie 3/4 cup white sugar

1/8 teaspoon salt

2 cups half-and-half cream

1/2 cup whipping cream

1/4 cup brown sugar

1/4 cup cornstarch

1/2 cup real butter

1 teaspoon vanilla

In sauce pan combine, white sugar, salt, half-and-half and whipping cream. Bring to a boil. In another sauce pan, combine brown sugar & cornstarch. Gradually whisk in hot mixture into brown sugar mixture. Add margarine/or butter (to me this makes it even better.). Cook over med. heat, whisk constantly, 5 min or until thick. Simmer 1 minute and stir in vanilla. Pour into uncooked pie shell and sprinkle w/cinnamon and nutmeg. Bake at 375°F for 25 minutes.

Soushi, that looks really good - have never heard of it. Now that I have, I hope to try it. Glad to see you here and we do understand.

SO HOT yesterday - way above normal. Pulled a pizza out of the freezer - easy to fix and everyone loved it. Paul, friend of Shannon's replaced my sink top in the bathroom. Was very angry over that top which was ONLY 10 years old, Davey, being Davey broke it. Now that was hard to do and do not have a clue how he did it. The new top is a smidge lower up against the wall than the other one so will have to figure something out to cover the line of putty which was on the original one. Always something. But at least it did get replaced and believe it or not I did not pay for it. Miracles sometimes happen.

Hope one and all have a great day.

Yes Indeedy, Freddie. Lots of Amish around here. The shopping centers have shelter for the horses. Don't know if you've ever heard of Shipshewana or not. It isn't too far from us. A big market and lots of Amish businesses. And a restaurant.

,Merle even sells to a couple Amish dealers who aren't allowed to use the motorized equipment. There are modifications tho

interesting to see how cell phones have changed things. Most all the young people seem to have them.

Was not aware there were Amish in your area. I learned something and that is good. I too would wonder how the cell phones work with no electricity. Must be some somewhere around there for them.

Fixed a package of precooked food and it was really good. Chicken, veggies i.e. bell peppers, fresh green beans, onions, rice with a delicious Southwestern flavored sauce. Just put it in a pan and about 20 minutes later it is ready to eat. Very very good - glad I got lazy again and took a shortcut.

Horribly hot yesterday and today more of the same is expected - even through tomorrow. Suppose to chill down but guess the weather - as usual - decided to do it's own thing. Way too hot for early June. Do not like turning the ACs on - yikes, there goes the bill. My last month's bill went sky high as they put another very high price increase in. Just not right that for basic electricity AND water AND trash pickup which everyone must have, is getting way out of hand. What a rip off. Actually gas prices are remaining very stable. That is a switch.

@Winifred wrote:

@Winifred it has been really hot here too, pups panting even with the fan on, me too, lol. Of course, the voice of doom DH, came home last night and announced it is supposed to be hotter today, but anything above 70 is too hot for me.

If I don't post, it is because we had leftovers. Last night I fixed salmon, spinach, and rice for DH I didn't eat the rice.

I learned a way to cook spinach so that the water does not leave it so it is actually a wonderful bite every time instead of watery, stingy spinach. Many may already know this, but since I learned this method, we eat spinach much more often.

Put it in a pan with a lid, I add a little salt, and a pinch of water, and let it cook without moving it, but keep an eye on it as it only takes a few minutes. as if left too long, it will then become watery.

I'm with you Mouseigirl. Below 70 I FREEZE. Above 70, I sweat like a stuck pig. 100 here today and very sultry. I cannot stand the moisture - love moisture when it comes as rain, but not hot air. Ahhhh, for the great dry air we use to have.

Went to Del Taco tonight - too hot to cook. Hopefully it will cool down a bit before summer hits here. I had a Mexican salad, it was horrible. what a mistake that was. The dressing was too powerful.

Stay cool one and all and eat well.

Been snacking on Goldfish crackers with Cheddar - shame on me but they sure were good. Have some ice cream in the freezer I have been thinking of also. LOL. I guess it will be up to one and all to get what they want. Davey is due back - I thought he was already due back, Shannon and her friend Paul are here - they worked out in the horrible heat at a neighbors to help them and overheated and have been sound asleep on the living room floor since about noon. The two little ones are with Sherry - she knew I was tired - bless her.

This heat is terrible - tomorrow suppose to be about 5 degrees cooler - sure hope so.
